He cleaned everything very carefully, used brush for oiling, used tissue paper for separating & serving, cut the edge very gently, stored all equipment neat & clean. I'm impressed.

I’m so tired of reading comments about cleanliness. The idea that everything is sterile is a very American idea. The rest of the world enjoys things on an entirely different level. Go to Germany and order pork anything and you won’t know what it is because the antibiotic, growth hormone crap we eat in America tastes nothing like the real deal. I always feel bad for these vendors. Just look at their faces half the time. Most of them are awkwardly just trying to do their job, while some tourist is all up in their personal space, lol. I will say this vendor is cleaner than most...Lol....
