When using a pot like this I used to do the same thing. But when relying on a gas stove, it's a pain having to turn thr heat off/down to prevent the oil getting too hot. I moved to a deep fryer a year and a half ago. It's so much more reliable. I can actually use a time frame to work out things are cooked properly. More importantly it helps when experimenting with cooking at different temperatures which have made a big deal to me in the last year.

instead of water, I would have used a couple sticks of butter in a pot melted it added the spices, and cooked them down a little then injected the buttery spice.
