to answer a few questions (and to get a little nerdy): 1. this dish is inspired by the cold fried chicken dish at momofuku ko bar in NYC. they don't have a recipe anywhere online so i spent a week R&Ding this dish to figure out how they make it. best fried chicken i've ever had tbh. 2. why everclear? similar to the heston method, alcohol evaporates faster than water/buttermilk in frying oil, so it results in a lighter and crispier crust than most fried chickens 3. why fry 4x? the 1st fry is blanching, aka cooking the chicken all the way through (to 165F, so it's not raw). the 2nd & 3rd fry starts to use the wet batter, which is particularly thin compared to most batters. unlike southern style (ie. adding buttermilk droplets to dry batter), this batter is a thin layer that builds a "glass-like" shell on the chicken (in a good way). and the 4th fry is at a higher temp and a final battering to coat the entire chicken. 4. isn't the chicken dry af after 4x frying? the overnight brining process of soy sauce and shio koji makes the chicken juicier (similar to buttermilk/pickle juice brining chicken), so it was still juicy at the end. in addition, between each frying stage i have to let the chicken cool to room temperature, thus not allowing the interior to cook as much as the exterior. TLDR: why everclear? alcohol makes lighter and crispier batter. why 4x frying? multiple thin layers of batter for a crispy shell. isn't the chicken dry? i brined the chicken overnight. but keep the hater comments coming 👹 also the full recipe is on my instagram if you're interested in trying this ☺️

Being from Atlanta, I grew up eating my mom’s fried chicken 🍗. She was always so good at keeping it very light and un-greasy. She was great. I was 22, living in Guam when I first discovered Korean fried chicken. It was an eye opener. So good and completely different from anything I’d ever had. I’d love to find an in between both of these.
