The tastiest marinade ever: Marinated Eggplants aka Berenjenas al Escabeche

I love eggplants. I like their meaty fruit, umami alike flavour when they are cooked. There are so many versions out there, and today, I am bringing you one of the newest dishes I have discovered through my partner who is from Buenos Aires.
I fell in love with Argentinian cuisine from the moment we had landed there and no wonder as there are so many people whose families have immigrated from the Mediterranean to the New World, bringing along their culinary customs and incredible flavors. With time, the Mediterranean cuisine intertwined with local herbs and spices, produce and surroundings, so now you have this incredible, mouthwatering fusion which has become a traditional Argentinean cuisine.
Each Argentinian family has its own recipe for this marinade, so you can enjoy many different versions. Some people will use chimichurri, some will use ají, others will use only bay leaves and some will mix mint and oregano with bay leaf. Some people will use only olive oil, while others will prefer sunflower oil and the third will mix them up.
I would say, let the whichever version Berenjenas al Escabeche find you and if it’s love at the first sight, don’t ever let it go.
Recipe:
4 medium to large eggplants
4-5 tbsp of salt
7-9 cloves of garlic
A pack of dried chimichurri spice mix
Bay leaves
Sunflower oil
Red wine vinegar
Once the brine boils, cover the pot and cook the eggplant slices on medium high for 35-40 minutes or until they are beautifully soft, but not falling apart.
Drain the eggplants well as we want them moist and soft, but not watery. They can be still warm as you are pilling them up in the jars. Once the jars have cooled off, put them in the fridge and let them marinate for at least two days. That’s the hardest part for us, waiting until the eggplant get infused with flavour. However, it is definitely worth the wait as the slices will be absolutely divine once they have fully absorbed the spices. We usually eat up all the jars within a month, sometimes sooner.
