Ayuuk is a journey.
The moment we tasted Pasilla Mixe Chilis in the Central de Abastos market in Oaxaca city, we knew that the complex smoky but fruity layers of the chili was something special.
What ensued was an adventure in finding our way back to the chili. It connected us to the incredible Mixe community, their centuries-old traditions and practices. It led us to work hand in hand with them; what started in 2019 as a 7 family project in two villages soon turned into a 73 family affair across 4 municipalities.
