    The charcoal chimney starter is the best way to start a fire... I have not bought lighter fluid in almost 20 years. A couple of pages from the newspaper and a match and in 15 - 20 mins you are cooking.

    Starting a fire - you can use alcohol/lighter cubes. They're like 10-30 cent each.

    Chicken: BREAST @ 165° LEGS & THIGHS@ 175°but they're VERY forgiving, so you can go up to 185 and still be ok. Burgers: Cook to at least medium, 160°

    Oiling grill grates make no sense unless you're cooking lid on at low temperatures. The grate surface in direct heat cooking reaches well over 500 deg F with the lid off, making short work of any oil on the grate surface. Better to brush oil on the surface of the food and move it around during direct heat cooking.

    oiling the grates here is to use the heat of the grill to create a carbonized surface so that food doesn't stick to the grill, the same principle behind seasoning cast iron or carbon steel cookware

    No it isn't. Explain then, why he scrapes the grill to remove the carbonized material before he oils it. All oiling does during direct heat grilling, is exceed the smoke point of the oil and impart a "carbonized" (acrid) flavor. Again, better to brush the food surface in this application.

    Yep agreed. I️ don’t oil I️t just gonna burn up. Nguyen a thin layer of burnt oil isn’t gonna do anything to stainless. Cast iron has super tiny pores to allow the oils and fats to settle and make the surface resilient to sticking. After a quick scrub with the grill brush just cut an onion in half, put I️t on a meat fork and quickly run across the hot/dirty grate. Slice off the dirty/burnt onion and the rest of the onion is still good to use!

    You have 3 options here. 1. Don't close the vents. 😁 2.Move the food to the indirect side until the fire dies down. 3. Raise the cooking grate up higher.

    How do you turn off the charcoal once you have finished cooking. Do you pour water or just let it burn out? Can it be reused, in case you pour water?

    Seriously though, if you're using a chimney, you can stuff it with paper, you can use one of the many different fire starters on the market too i.e. wax cubes, tumbleweeds.

    I will never understand why people who grill would EVER use gas or propane. I don't care if it's "convenient", using charcoal is the only way to grill. I finally got a large Forge charcoal grill after not being allowed to have one at the apartments we unfortunately had to live in. They only allowed their stupid gas grills and no charcoal. Unless you like shitty tasting meat, use your zero testosterone gas grills. So finally got this charcoal grill now that we have a house and I use it all the time. No question the meat tatses better than gas and firing up the chimney is the best part! I don't know, just my opinion, but charcoal grilling is for real men.
