The Secret to the Best Roasted Tomato Couscous Chickpea Pilaf

This easy and delicious couscous pilaf is so easy to make and such a fabulous side dish to make. Roasting tomatoes is a great technique to learn and enhances any recipe. Please enjoy!

INGREDIENTS:
1 cup couscous
2 cups chicken broth (vegetable broth or water can be used)
1 (15 ounce) can chickpeas, drained
3 garlic cloves, minced fine
2-3 tablespoons extra virgin olive oil
fresh herbs (basil, oregano, parsley, chives, or whatever you have) about 1/4 cup, minced
2 pints grape or cherry tomatoes, washed and dried
extra virgin olive oil to drizzle on tomatoes
kosher or sea salt to season tomatoes and pilaf
black ground pepper to season tomatoes and pilaf
1/2 cup sliced almonds, toasted (pine nuts or another nut can be used)
