    Been looking at getting one of these just for the ease of use and for the daily sharpening. I regularly sharpen all my knives on my T4.

    I use diamond plates, coarse and fine, by hand and a chef's steel. For me, maintaining the edge with the steel makes sharpening on the plates an infrequent occurrence. Interesting product. Good video. Thanks for sharing.

    That's the problem with diamond plates, you don't get around to doing too often. But I'm sure they're nice and sharp once you do! Thanks John!

    @@darbinorvar The Tormek website does its best to make finding out the price as awkward as possible. It shouldn't take clicking and scrolling through page after page to find a price and when you do it's in Swedish krona.

    Sharpen and hone by hand. Muscle memory and holding at the correct angle are key. Also knowing that you don’t need to go beyond a 2 or 3 K stone in the kitchen. Honing a single edge knives is similar to honing chisels in that the bur will appear at the back an you need to keep the back flat. Also keep your stones flat with diamond coated flattening plates. Straight razors are another world and level of honing - jewelers loops help verify that edge and mirrored bevels, but you need to feel that shave.
