The QUEEN of PORK in Trinidad!! Trini Fried Pork + Indian Sweets in Couva, Trinidad!!

My trip through the islands of Trinidad and Tobago continued in Couva, a town about one hour south of Port of Spain in the central part of Trinidad.
Joining me were my friends Chef Jason Peru, Candice Mohan, and David, who took me to Quan Kep’s Pork Shed. There are also several food trucks in the area that sell various pies!

I watched them fry up some pork in a wok. They also roast pork for 3 hours in Chinese barrel roasters.
Then, she cut up some blood sausage, which she would fry up with onions, culantro, pimiento, and hot peppers. I love blood sausage, and this one doesn’t contain rice, only bread!
I tried a bit of sausage. It was amazing. It was dense and tasty. I’d never had a blood sausage like this. I loved the culantro, chilies, garlic, and bread in it!
Next, she fried three huge pieces of pork in a pot, and stir-fried the blood sausage in a wok. The tradition of blood sausage in Trinidad comes from Britain, who once colonized the islands.
She added chadon beni, onion, pimientos, and hot peppers to make a stir-fry. Meanwhile, the frying pork basically looked like chicharron!
The blood sausage with peppers was exceptional. The crust on the outside was amazing, and I loved the addition of the spices. I loved how smooth it was!
Next, she fried a Venezuelan-style pork empanada. Trinidad and Tobago is a wonderful melting pot of cultures and flavors!
We followed that with Geera pork, which cubed is pork made from pork shoulder and contains salt, pepper, and cumin. It was flavorful, tender, and fatty, and wasn’t overly spicy.
Next, she fried up some pork wontons and tossed them into the wok with Grandmother sauce, sesame oil, and the stir-fried veg mix.
The flavor was fantastic. The chilies and brown bean sauce were unreal, and they were so crispy and tender. They contained lots of moist pork, too!
Next was the fried pork belly, which was so juicy and fatty. There was an amazing contrast of textures, from the crispy cracklings to the meat to the gelatinous fat.
Then, Jason got a Trini bun and added pork to it. It was so juicy, it didn’t need sauce! The pork was so good, I couldn’t stop eating it!
The fried pork leg was full of flavor. It was even better than the pork belly! This woman’s food was unreal!
Next was the pork empanada, which was lightly fried. I loved the corn flour exterior and the decent amount of minced pork inside!
Next, we drove down to a town called Debe. Along the busy food strip are shops selling Indian and Trinidadian snacks.
At the end of the strip is Sweety Shoppe Bakery, which sells Indian and Trini sweets like barfi, jalebi, toolum, coconut cake, bennie balls, sugar cake, kurma, and more!
We got a massive jalebi, kurma, bennie balls, sugar cake, and toolum for 36 TTD/$6 USD.
The jalebi was sticky, sugary, decadent, and crispy. The toolum contained molasses and coconut. The sweetness and bitterness of the molasses and the shredded coconut was excellent!
The bennie ball was dense and full of sesame seeds and nutmeg. They’re hard, though! The kurma is a fried dough made with flour, condensed milk, and spices, and coated with sugar syrup.
They reminded me of a butter cookie. I loved the cinnamon. It was a sugar rush, though! Finally, the coconut cake was dense and reminded me almost of a Rice Krispies Treat.
What an incredible morning of pork and Indian sweets!

    Maybe she's a good cook but I tasted her offerings once and was disappointed. Maybe the pork was leftover or overcooked. Or her workers cooked but I wasted money on pepper pork, roasted pork, crispy skin pork and pork sandwiches. The wantons were flavourful though but the trip was a waste. The QuanKeps in Princes Town offer consistently great tasting pork... Haven't been there in a while though.

    This has undoubtedly become my morning digest...literally speaking!!! I work nights, come home, sip coffee in bed and watch everything David has to offer. I have had Quan kep's food from their original restaurant in Princes Town and their pork sandwiches can be smelt from around the corner. Ppl stop their in droves just for that pork and a cold beer. Her daddy taught her well. Your vids are the first thing I watch every morning!

    The Queen of Pork comes from a line of the best pork kings in Princes Town...it brought back memories of Fridays after work when I worked in P/Town and we'd go for pork and drinks at the family's bars or the restaurant for a small lime 💜

    Scully man. One of the most talented photographers in T&T.     I'm really happy David is enjoying himself. I am yet to see him try food that we Trinis eat like an every day thing. Most of that foods are once a week food. Or even less. Our diet is very heavy on rice. So rice peas/beans and protein.

    Oof. Love the video. Definitely inspirational/motivational. Reinvigorated me to try our local trini cuisine. There are shops and and foods that I haven't heard of/tried.     Queen of pork food looks delicious, the fried pork reminds me of my mother's Christmas dinner, she'd slow rost the pork (pernil), & serve with rice and beans, fried plantains, leafy green salad and avocado on the side, yum, thanks for the video

    I am enjoying seeing my island foods being showed however I haven't seen him eat any good creole good like pealu with cole slaw, coo coo calloo with steam fish or oil down. Think a visit to the breakfast shed in the city is needed.

    @@Davidsbeenhere you would love the islands. You would find, as you already did in Trinidad and Tobago, that the people are the nicest and kindest you would find anywhere in the world. Good, clean, tasty and well-prepared seasoned food. If you try West Indian food anywhere else, it would never match what you get in the islands. You would really enjoy it.

    @@Davidsbeenhere I’ve been to Haiti, their food is delicious but If I were you’d I’d excise extreme caution visiting their in recent times! Your safety should be paramount. Read the news first, I had a Haitian friend who was shot and killed in an attempted kidnapping. But when it’s safe you should visit. Haiti also has Lebanese and Syrian food and people. I had such a great time there! I

    Wondering if he tried one pot rice dishes: ochro rice, baghi rice or split peas rice all cooked with salted meat/ salted fish. To me best is leftover split peas rice with stew chicken or beef.

    Wonderful video David! 😊 I hope you were able to taste our other delicacies in Trinidad like pastelles 🫔 in Lopinot or some roast lobster and roast fish 🦞 by Bodow's in Mayaro or corn soup 🌽 at the Queen's Park Savannah! 😋

    Hmm.. I hoped David would’ve experienced a broader perspective showcasing the renowned multi ethnic landscape of Trini cuisine. He was so pumped to visit Trinidad and I was excited to share these videos with ppl that plan to visit. Hopefully at minimum a plate of pelau will make the cut.

    The sesame seed sweet (Bennie ball) is called 'Elli Unda' in Kerala. Tahts a straight up Kerala sweet delicacy.
