Honestly, as an European I have no idea what their are talking about most of the time. We have neither Cosco nor IHOP, the idea of getting steak with pancakes as a side is wild to me and I don't think I've ever heard about honey pizza or pies and jello with meat/organs. But it's very enjoyable to listen to them talk about these things! Almost educational, haha!

Sweetbreads are roasted organ meat, typically heart, liver, or thymus of animals. Offal is entrails and internal organs used as food. Head Cheese is meat from the heads of a calf or pig "sweetbread" likely comes from Middle English "brede" = roasted meat, and sweet because most of these organ meats are sweet.

Sweetbread is specifically the thymus or pancreas, typically from calf or lamb. one is close to the heart which may be the source of confusion for some, as "heart" sweetbreads does not reffer to it actually being heart, but to the fact that its the gland next to the heart (thymus).

Head Cheese is delicious. I make it myself in a pot over 6-8 hours. Tear up the meat and fat, pour the broth over it in a bread pan, and add in some vinegar. Served with fresh red onions and homemade sour cream or farmer's cheese. Grilled small intestine isn't too bad either. You really gotta clean it through, it is filled with bile which is so alkaline it's disgustingly bitter. Like compressed kale and baking soda. Once cleaned it's just very meaty and has little flavor, good with hot spices. Liver and heart are amazing. Probably my favorites. I just sear them like steak. And kidney is the worst, 0/10. It takes so much prep and still tastes like urine.

So the godfather of apples created the Honeycrisp, which was a return to what the red delicious used to be. But he didn't control it, so within a short while, marketing teams again made his jewel of flavor and crispness mealy and bland in favor of making it look pretty. So when he made the Cosmic crisp apple, he trademarked it and protected it, so that anyone who wanted to grow it, had to do so to his genetic standards, so that they couldn't dilute it for looks, and would have to grow it for flavor. as a result, the Cosmic is, in my opinion, the best raw eating apple there is.

I have a slow press juicer- I put everything through twice to get more from it. repeating the juice takes out more so it's more juice less pulp, putting the pulp through again can sometimes squeeze a little more juice out. but yes, lots of fruit to make juice. usually mixing it with some soda water or filtered water can make it last longer and with a lighter taste it's easier to drink. :)

42:00 Why does canned food last a long time without refrigeration? Food typically spoils because it is partially or wholly broken down by bacteria. To prevent spoilage, we eliminate as much bacteria as possible, and make it as difficult as possible for more bacteria to multiply on it. Refrigeration and freezing take advantage of the fact that bacteria grows and multiplies much slower in colder environments than warmer ones. The canning process kills the vast majority of bacteria and seals the food away from additional bacteria. This means that for the food to spoil, whatever bacteria remains has to multiply many, many, MANY more times to get large enough to spoil a significant amount of the food in the can. Home canning also takes advantage of the fact that most bacteria either dies or grows slowly in environments of high salt, low water, and low sugar. That's also why salted meat works so well.

I work at a vinyard/winery in wine country. The orchards and such all kinda have the same process. So because consumers only like the nicest stuff lots of fruit doesnt get picked or gets tossed on the ground ( do decompose and fertilize). This is all lost income, you can recover that by taking the stuff that is sized different, has hail damage or sunburns or just *looks* not as nice while still being perfectly fine by pressing out the juice. That is why juice can be even cheaper depending on the product and generally costs the same. Juice( besides cocktail and concentrate) is the way to go if you are just having it for the nutrients.

I don't understand the desire for something that looks nice. The only way I like fruit is when it's almost overripe. That really soft brown mushy stage where it pops like gel, just before it becomes bitter from rot. Anything before where fruit is crisp I find to be too tart and I will leave fruit on my counter until it gets to the good stage. Of course the stage I deem edible lasts 2 days, but that small window is worth it.
