You think it's weird that after 7-8 years of msc, PhD one still has to make themselves job market ready separately🤔 Sometimes it feels like one spend all their lifetime in lab

It takes 3 years for UG, 2 for MSc and average 5 years for PhD. After PhD you can get into academia but in Science there are people who have post PhD teaching experience + Post Docs as well so the competition is higher when compared to other domains. Moreover, biotechnology is not there in majority of the colleges (unlike subjects like English or Mathematics which are there in almost every college) so the faculty positions are already limited. If you want to switch to industry, people won't hire you unless you have other skills like data analytics, strategy planning or management (getting hired on the basis of your PhD is a possibility but it is rare).
