Happy Birthday Matt! What a wonderful dinner to celebrate. FYI: mustard is a classic spice for mac and cheese (actually, ANY cheese sauce) because it amplifies the cheese flavor.

I hope Matt had a happy birthday! The macaroni looks so creamy and delicious. I have never heard of a holy smoke cake. I would love for you to show us how to make one someday. Maybe granny would be willing to be in the video making it.

@@CelebratingAppalachia I know that recipe. The only difference is I use butterscotch pudding...and we call it Finger Lickin' Cake. Will use butter pecan the next time and see how we like it. I know it will be good! Thanks for pointing me to the recipe. Would still enjoy seeing Granny make it.

I love macaroni & cheese. My mom’s recipe ( please don’t ask for measurements) lol, mama didn’t measure. She always used Velvetta cheese when making Mac n cheese. Milnot milk , butter, an egg, garlic powder, red pepper, a little flour , after mixing those ingredients, she’d cube her cheese & bake in the oven. Stir as needed until the cheese had melted.., 😋😋😋! I’m so glad I helped in the kitchen. My aunts & uncle say I cook just like my mama, their sister . My grandma was a good cook too. I’ve taken over the tradition of making chow chow for the family. One of my aunts told me mine was better than grandma’s & mama. My grandma would be proud , my mom would rollover in her grave! She was competitive ! 😂! Love & really miss her. My brother & I was plan on continuing our family traditions!!

Happy Belated Birthday, Matt! You really had a nice dinner and dessert! Thank you for this recipe, Tipper! I love anything with cheese, and I love pretty much every kind of cheese in the world! Macaroni and cheese is always at the top of my list of favorite cheese dishes. I think all of us survived on boxed Mac and cheese, packages of top ramen, and hot dogs when we first moved out of our parents’ houses! And cereal. Lots of meals of just milk and cereal. I definitely prefer creamy, homemade Mac and cheese over boxed. If I have to eat boxed, my favorite is the shells and velveeta cheese kind. I have put diced hot dogs, or chicken, into the made boxed Mac and cheese for variety. And, like Matt, I love black pepper, especially when it is the grind-your-own variety of little colored peppers. I am going to have to try this creamy mac and cheese! I was lucky enough to have two Appalachian grandmothers who made two different styles of mac and cheese. I loved both kinds - one with eggs as well as milk, to use the surplus on their dairy farm, and always sharp cheddar; the other more like this one, with cayenne or paprika, mustard powder, black pepper, and a creamy Velveeta sauce, with cornflake crumbs on top, as she worked in the bleachery 9 to 5 and was very happy for convenience foods like cornflake crumbs and Velveeta that came out in the 50s, to save time when she got home at night. I've sort of combined their two recipes to make my own, but I adore making new ones. My favorite shot in this video was the whole table at the end - that meal is exactly what Mamaw made us for Easter, plus some devilled eggs and a banana pudding with meringue on top. The holy smoke cake looks amazing! Happy birthday, Matt!

Hello Tipper! You know what I am wishing? That I had been there for Matt’s birthday dinner! 😄 There was nothing on the table that I wouldn’t have loved. I’ve never made homemade Mac n cheese but it reminded me of my Mama saying she wished she knew how her Mother had made it. She said she used a couple or more kinds of cheese 🧀 and baked it in the oven. We had Mac n cheese growing up a lot. Due to limited money Mama always planned her weekly menu and said she had gone to the grocery store many times with a $5 bill. This was in the 50’s and my Daddy always worked. It wasn’t until I was 9 that we moved to the county and had an extra lot beside the house which had been Grandma’s. It was then that Mama planted a huge garden and my young Mama learned all about canning, freezing after we had a freezer, making jelly, apple butter. She and Daddy helped Papaw at hog killing time. I remember Mama’s stepmother and her making sausage. Somehow we had a freezer by this time so Papaw provided a portion of pork for us. I’ve always wondered why meat back then stayed good in the freezer for such a long time but if I buy meat now and freeze it it very often ends up in the trash due to freezer burn. I hate to waste money like that. Have you ever made Tomato Relish? Mama and I made it only once and it was wonderful! We had gotten the recipe from my step Mamaw’s niece in Blackwater, Virginia. We ate soup beans a lot throughout my life, not only because it was cheap and went a long way (there were only 5 of us) but Daddy loved it the thicker it got. Not me! This relish was so good on it! I love squash and zucchini relish too! My how I have strayed from the topic of Mac n cheese! Lol! You know how we old people love to reminisce! Not referring to you. I’m 71! The kind we had in earlier years was the kind that came in a tall skinny box and the cheese was powdered. It was 4 for a $1 back then. I’m pretty sure it was Kraft. Then came Velveeta! Now I have this wonderful recipe for homemade and my Mama is gone. Just had my 7th Mother’s Day without her. So many memories! I did not grow up in the mountains but in town and then the county but my Daddy was from the country and grew up so poor that his oldest sister said they weren’t even really aware of the Great Depression. I guess where I live and was raised was at the bottom of the mountains because I was only a couple of miles from VA where the mountains are still amazingly beautiful! I’m proud to be a southerner and not at all ashamed of being from Appalachian roots. Kingsport, TN is where I’ve lived most of my life. I can be in the mountains in short order in three different directions and three different mountain ranges. Smokies, Appalachian, and Blue Ridge Mountains. Could it get any better than this? Naw! Take care, keep up the good work, and remember you are appreciated. Btw, I have the Dorie book I bought at Cades Cove, my happy place! 💜🙏🏻

Birthday Blessings to Matt! I've tried a bunch of mac and cheese recipes too, and our favorite is my husband's Auntie Bev's. Hers is easy peasy to make and takes an hour in the oven, which gives me time to relax a bit before dinner. I put an entire stick of butter on the top of it, sliced with a cheese slicer and it gets soooooo brown on top. Like you, I've varied the cheeses over the years and used up bits and bobs of cheese left in the refrigerator.
