Eggplants with Garlic Sauce, Yu Xiang Qie Zi, is a classic Sichuan dish. Normally when you cook eggplants, they will turn brown, and become soggy and super oily. Today I’d like to show you some tricks so those won’t happen. It’s going to be the most delicious Eggplants with Garlic Sauce!

Serves: 2
Prep time: 30 minutes
Cook time: 10 minutes
For the eggplants:
2 teaspoons salt
1 teaspoon rice vinegar
4 large Chinese eggplants, quartered the eggplants lengthwise, 2-inch long
1 tablespoon cornstarch
4 cups avocado oil
For the stir-fry:
2 tablespoons avocado oil
6 ounces ground pork
1 tablespoon Sichuan Pixian broad bean paste (duo ban jiang)
1/2 teaspoon ginger, minced
5 garlic cloves, minced
1 teaspoon salted chopped chilies (duo jiao), could replace it with pao jiao, or other red chili peppers
1 tablespoon scallions, minced
For the sauce:
1 tablespoon soy sauce
1 tablespoon dark soy sauce
1 tablespoon Chinkiang vinegar
2 tablespoons sugar
2/3 cup water
1 tablespoon cornstarch
3 tablespoon water

Hi CiCi Li, here where I live I don't get Chinese eggplants. I get the larger and more rounder ones with a deep deep bluish colour. Can you please let me know the approximate weight of the eggplants that you used. Thank you!

Thank you for the tip with he egg plant, I could never figure why my home version of garlic eggplant always turn dark and soggy when I cook them. I will definitely try your suggestion!

This looks So delicious!!! 🤤 It reminds me of a similar dish from local restaurant but they included shrimp and water chestnuts. What, if any, substitutions can be made for things like the bean paste, wine and chilies? Jalapeño? Thai? Serrano?

Thanks for the comment! If you can't find pixian bean paste, you could use other types of bean paste or miso. For the wine, you could use any cooking wine. And for the chilies, you could use anything else that you enjoy as well. See you at the new release this Friday!

Love this, don't comment much but ran out of broad bean pasta. So used gochujang paste, was also very good. Already cut eggplant and scallions before noticed, you know great recipe when can swap 1 ingredient and still great, tyvm.

This recipe looks amazing! I'm definitely trying it after work. Quick question, is "Broad Bean Paste" the same as Touban Djan? Also, the recipe calls for salted chili peppers, but could I use pickled red peppers instead? Last but not least, do you think it would work with some dried Korean chili flakes and green Sichuan peppercorns for an extra kick? (finely chopped)

Thank you for asking! The Pixian broad bean paste is Sichuan-style doubanjiang, which is a little spicy. You could also replace it with the regular doubanjiang. And yes, you could also add other types of chili peppers, pepper flakes, and Sichuan peppercorns for additional flavors. Happy cooking! ☺️

About 8 to 10 minutes over high heat until softened. 😊

It most likely doesn't have chili oil in it. You could simply add about 2 teaspoons of chili oil to the dish. It will taste good with or without the chili oil. I hope it works out for you! ☺️

- I don’t like to deep fry. When I stir fry it takes a while to cook it but it loses its color. Is their an alternate way to cook it without losing its color. - Also, I like thinner gravy. Should I add more water or reduce the cornstarch.

You could also steam or blanch eggplants in water. If you like a thinner sauce, you could reduce the cornstarch by half. Have fun cooking! 😊

How many eggplant to use ?
When you deep fry eggplant they retain their color.
What if i don't have rice vinegar? Is it ok to use normal vinegar?

Thanks for asking! They are both made from soybeans, but they taste a bit differently. The broad bean paste I used is from Sichuan, and it's spicy.
