In hmong culture we have something similar to this which is also called rice cakes and is made out of cooked sticky rice which we mush into the mould and turns out into rice cakes.

They don't use fermemted rice for making ciba(糍粑) =glutinous rice cake.

I love it when the rice cakes puff up. How long do you have to age them to get that effect.
