I got one from my dad and its the most beautiful knife. after seeing this video I've got alot more respect for these knifes.

Yes, this is possible, but if the plates are too close to the spring, this could hinder opening and closing. So it's a question of fine-tuning. We can make this adjustment if you wish. @@robertsmith616 You're right two different colors at the prices it should be a sign of quality to use two scales that are the same wood or horn.
