Crispy Smashed Potatoes
Potatoes and Seasoning
1.5kg (3.3lbs) - Baby or New Potatoes
2 Tbsp (40ml) - Extra Virgin Olive Oil
1 tsp (3g) - Onion Powder
1 tsp (3g) - Garlic Powder
1 tsp (3g) - Smoked Paprika
1/4 tsp (0.2g) - Mustard Powder
1/2 tsp (1.5g) - Ground Fennel
Salt & Pepper To Taste
Flat leaf Parsley, Garnish
Basic Mayonnaise -
1 - Whole Egg
3 tsp (15ml) - White Vinegar
1 tsp (10g) - Dijon Mustard
150ml (180g) - Vegetable Oil
Honey Mustard Add Ins -
1 Tbsp (20g) - Dijon Mustard
1 Tbsp (20g) - Wholegrain or American Mustard
2 1/2 Tbsp (50g) - Honey
1 tsp (3g) - Garlic Powder
1 tsp (3g) - Sweet Paprika
Salt & Pepper To Taste
Method -
Preheat oven to 180.c - 350.f. Line a baking sheet with parchment paper
If your potatoes are large, slice them in half. If not, leave them whole. Place the potatoes into a pot of salted cold water and bring to a boil. Cook for 20 minutes or until fork tender but not falling apart. Drain the potatoes and allow them to dry.
Place the potatoes onto a large baking tray lined with parchment paper. Use the bottom of a glass or flat surface to push and smash the potatoes.
Mix all the spice ingredients in a bowl and sprinkle over each potato. Check seasoning.
Bake the smashed potatoes in the oven for 40-50 minutes or until golden and extremely crispy. Flip the potatoes in the last 20 minutes.
Add all the base mayonnaise ingredients to a tall jar or container to make the mayonnaise. Blend with an immersion blender until a thick emulsion has been created (mayonnaise). Add in the remaining ingredients and blend again. Check seasoning and store in the fridge until ready to serve.
Serve the crispy potatoes with the honey mustard mayonnaise and garnish with flat-leaf parsley. Dig in.

Chef Jack, I am currently in the process of making this dish, and my only hope is that mine come out looking as good as yours. Also, I was having issues with the potatoes sticking to the bottom of the glass that I used to smash them. I added oil as you suggested, and then added more when it didn't work as well as I thought it should, then I figured out if I twist the glass slightly as I am trying to remove it, the potato won't stick to it as much. I've got another 20 or 25 minutes before these are ready, and I can't wait...

This is very cheap. You don’t have to make the sauce or the seasoning. A simple mayo and salt and pepper can be used. Cheers

Great question! The reason I do that is to stabilise the basic mayonnaise first. Once that’s established and thick I’ll then adjust it with the other ingredients. You could add all the ingredients together at once but you have a higher chance of the emulsion breaking

love the idea, but surely seasoning them partly tgrough, or entirely after cooking would be better? more leniency to crisp up the potatoes without risking burning or breaking down the seasoning too much. definitely just do whatever works, but as a very lazy home cook i like to make things as foolproof as possible so i can half ass them as much as possible :)

Always season during the process as flavours change. This is why you’ll see me and pretty much any other chef out there seasoning a dish or ingredient multiple times over the cook period

He probably means the vinegar that's labeled "White vinegar" which is probably the same as distilled. The 5% acid stuff.

People are searching specifically for "life changing" potato recipes? It's just more click bait, and that's a shame, since the video and recipe are solid. Of course the reason is a desire to get the KZread algo recommending your videos. What we really need to stop this HORRIBLE trend is for content creators like youtlrself to rage at the platforms, incessantly, to change how the algorithm works, so I can like your video. Cause I passionately and fervently avoid liking videos that use clickbait titles, which is unfair to you and ruins the accuracy of what I get out of the algorithm. I gotta have my standards though.
