So many of the videos about Alchemist focus on the drama or the expense - I think this was a respectful, insightful conversation about the power of a chef and his vision, with the most polite call-out of the guide at the end.

@@haesken2123If it is, then only in France. Outside you can throw whatever money at a restaurant you want, but the quality and special stuff has to be present. So to the point that you can buy a 3-star chef and let him have no budget to get a place to 3 stars then yes, but else no.

You know, I could have sworn that I saw someone that looked like you sitting across from us when my sister and I went to Alchemist last year, but I wasn't sure and we were in the middle of dining so I put that out of my mind. Low and behold, as I continue watching the video, more and more context clues point to that exact conclusion and then I randomly see us in the background across from you haha! That's my sister and I at the bottom left at 7:57, 8:22, and more! I'm the guy often holding up my phone recording stuff bahaha. What a coincidence!!! So it WAS you I saw! If I had known it was you, I would have approached you for a handshake and maybe some banter. Your video's are great to watch, and I hope to see more from you! :)

Also, interesting to note, that some of our impressions deviated a bit! My sister and I got a different one from the butterfly amuse (even though I really wanted to try that one admittedly) and the way our burnout chicken was prepared/showcased was a little different! We got the leg as opposed to your wing and it was presented to us inside a small cage that we removed! Quite interesting but I'm glad that it shows that they definitely use every part of the animal and don't let things go to waste :).

If you're happy to pay 700€ to have a dinner where you're lectured about world problems and made to eat un-appetizing food (insects, tongue, eye, brain, plastic), suit yourself. But it's easy to understand how it might not be appealing to everyone : if one goes there for fine dining only, they'll be disappointed.

@josephr7529 If you're willing to pay 700€, but not willing to research the restaurant you're visiting, then maybe that's your own fault? The place is about more than just the food, they're not shy about that fact. But the food is still some of the best in the world, even if it has more weight behind its message than other restaurants.

I'm always leery of restaurants like Alchemist where the chef or owners stated purpose centers around the "need" to "educate" diners on their pet cause or agenda. Iris is an example of heavy handed and preachy, while Central in Peru is an example of perfectly balancing informing people of an area and its traditions while emphasizing the need to preserve both. From this video, it seems as though Alchemist is managing to balance those aspects fairly well. While there were some moments that had me rolling my eyes a bit, over all the creativity, execution, and attention to detail looks spot on and chef is clearly passionate, creative, and immensely talented. While also having the business wherewithal to hire the best staff he can. I have to echo Alexander's sentiment by asking why Alchemist has not yet received its third Michelin star. Very well-presented sir and I love that you've left so much of the experience out of the video so that anyone who goes will still be amazed and delighted by the full dining experience. It's definitely a bucket list visit and one I would gladly take.

Thank you for this very differentiated, reflective and very well-founded report, which does not omit critical comments. During my visit, the numerous references to theatre performances were emphasised - now good theatre lives from opening up intermediate spaces and levels in which you can adjust your thoughts. This is precisely what "Alchemist" does not offer - I felt that comparatively banal messages were conveyed with clumsy overpowering effects. I give the chef a lot of credit for exemplifying this attitude and being extraordinarily committed to his concerns. Nevertheless, quite a lot remains superficial in the presentation - if you reduce "1984" to a visual effect, for example, you have not understood the book (and presumably not read it either...) Nice that your wine accompaniment was so sophisticated! I found that to be the best part of my visit to the "Alchemist".

Hey Alex, question for you. Do you find you are full at the end of these dining experiences? I would assume 50 courses probably would, but generally across all your videos?

Michelin only judges on food. They have stated that they also observe other factors to help achieve consistency. As much as I appreciate that the point of this experience is to create an impact over perfection, each dish is its narrative, and a denouement would be challenging, as every diner would have their takeaway. These aspects lay beyond Michelin's focus, which is food-centric. It is remarkable to achieve 2 stars for that many courses, that many people, that often and have everything else in play. I believe it would be better to think of this as a production of a very creative mind, where food is part of it, but not its dominant feature. Michelin's focus is food; what they are doing lies beyond that.

I couldn't relax in a restaurant like this. I'd have butterflies in my stomach...
