Dining at the WORLD’S NO. 1 RESTAURANT Before It Closes - NOMA

Today, we are back in Copenhagen for the restaurant that turned Denmark into a gastro-nation.
Arguably the best restaurant in the world will close for good at the end of 2024.
It’s name is Noma.
Three years in a row, from 2010 to 2012, Noma was named NO.1 restaurant in the world.
They would go on to claim the number one spot a total of 5 times.

I had the exact same menu and while loved a lot of the dishes, our views on the last dessert is incredibly different. While you called it your favorite, both my wife and I hated it. A bitter, gooey slime coated our mouths after that dish and didn’t go away until brushing our teeth three times. It was by far the worst dessert I have ever tried in my life. We are happy to have gotten to visit Noma before they close down and will remember the visit with mostly happy memories for life.

As an aside, I see that your enthusiasm for food is evident. That said, your couture, jewellery, etc., all speak of someone who has not come from a hospitality background. To hear the backstory about what your occupation was and what led you to want to invest in your eatery and to fund world travel to explore higher-end dining would be interesting. As a chef of thirty years who has worked in that world, more often than not, most of the clientele are not fellow workers within the industry but people who have worked vastly different roles and positions, and yet here they are with the same conviction towards food, even though they never explored as a worker, but as the diner.

1:06 pretty sure he didnt drop out of high school, first because high school in denmark is a completely different thing and the people that go there are usually around 25-30 years old, and because you are legally done with your education after 10 years of school, and since most people start school at 5 in denmark, he probably didnt drop out, he just finished school and went straight to culinary school, which isnt even unusual to do if you want to be a chef in denmark. a full education in denmark usually looks like this: 5-6 years old to 15-16 years old; mandatory school 15-16 years old to 16-17 years old; afterschool, which is basically just a boarding school where you dont really do much school and you just chill. people sometimes skip this stage 15-17 years old to 17-21 years old; gymnasium, which is kinda the danish equivalent of american high school. how long this part is depends on which “ve chosen. for example, the shortest ones are HF and EUD, which are only 2 years, and the longest is EUX, which is 4 years. STX, HTX, and HHX are all 3 years with STX being the all-round and most common one. culinary school is an EUD 18-21 years old to 20-30 years old; university, but this one isnt as common as the rest. you also need to go on a gymnasium line that ends with X in order to even be able to get in

my favorite restaurant in the world!!! I have a question :) I was at a fine dining restaurant in Copenhagen a few weeks ago and me and my friend finished all of our wine paring glasses... we were the last guests to leave. The waitress was "impressed" how we could finish our drinks. Most people would leave a lot left So my question is: Do you or people usually not finish their wine glasses? I am like: I pay for this, so I gotta enjoy it :))

Was probably one of the biggest disappoints ever. Went for seafood season. Forced wine pairing for Friday lunch with almost solely natural white wines which none of the 8 guests we were enjoyed. Concerning food, NOMA is more interested in « shocking » its guests with presentation than actual taste. Enjoyed only the first of the plethora of dishes. Long story short, not a bad thing it’s the last year

Great video and new subscriber! The thing I appreciate in particular, relative to other "Food KZreadrs", is the thoughtful description and reaction to the food. It seems most KZreadrs simply rely on "oohhing" and "aahing" and telling the viewer that something is "AMAZING!" It's clear they don't have particularly sophisticated palate or the ability to articulate what they are eating. I've only seen 2 of Alexander's videos (more to come!), but his articulation of the taste profiles with a full description of the ingredients and his honest reaction are sorely needed on KZread. The videos have been much more informative and help paint a better picture of the dining and tasting experience. Regarding Noma, I can see why a lot of comments note how innovative the cuisine is at Noma, but generally speaking, it seems people don't leave the experience naming it their favorite restaurant. To me, it looks like a science experiment and a "mission" first, with the culinary enjoyment being tertiary. Frankly, nothing looked particularly appetizing and Alexander didn't seem to enjoy the meal that much. His reaction aligns with how most of it looked. I've been to my share of 3 Michelin starred restaurants, including Per Se, Le Bernadin and Eleven Madison Park (I'm from NY, obviously), but they don't sacrifice flavor for experimentation. They manage to meld the two into an innovative whole. Noma's motto seems to be, "we're going to give you some weird shit we concocted in the lab that utilizes the best ingredients of Denmark. Hope it tastes OK!" That approach obviously has its adherents, but I don't think it strikes the right balance for the diner.

Agree with this and I know where I would rather eat if given the choice of any of your NY restaurants or Noma , and I wouldn’t be eating any Reindeer brains for a clue .
