Before adding the water, I would normally let the chicken steam by itself by covering for 5 or 10 mins,so u get that extra flavor of the chicken in the gravy!! The gravy will get a richer Color as well 👍thanks for the Flour tip👍👍looks good
Xin Nian Kuai Le! Hope you're having a good CNY celebration! I love how you just used the broth to cook the mushrooms/noodles instead of boiling a pot of water and doing that separately. This way the flavor both them is enhanced and it's less work. Noice!

I love your cooking because you not only wash meat thoroughly, you explain the reasons WHY. Too many western cooks say not to wash chicken because splashing water will contaminate the rest of the kitchen, rather than showing HOW to prevent that from happening. I love many many cuisines and chinese was my first love besides my own culture. It is a thrill to be learning authentic chinese technique. Thank you.
