Every cake I make is a "sad" cake LOL...BUT if you take a sad cake and put it in a bowl with chocolate sauce and marshmallows in the microwave....VIOLA HAPPY CAKE.

While you've got that Bisquick, IDK if you've ever made sausage balls, it's a recipe that used to come on the side as a way of stretching ground pork. 2C of Bisquick, 1c shredded cheddar, 1lb ground pork/sausage, 1 egg, salt and pepper. Combine, form until balls about 1 inch in diameter, bake at 325 for 35 minutes, so good, so easy, it's a holiday tradition in my family

My mother used to make homemade cooked on the stove oatmeal and cream of wheat cooked on the stove. Every time I make cream of wheat, which is one of my top favorite foods, I think of my mom. She passed away 28 years ago… Every time I make it that’s who I think of. I will be 72 years old soon. Thank you mom and dad of course. I miss both of you. 😊❤❤

I love Cream of Wheat too. I cook mine with milk. Never use water. My husband of 46 plus years makes oatmeal everyday for his breakfast. He adds raisins while it cooks. He uses the old fashioned oat. But, Cream of Wheat if you remember the song? It's Cream of Wheat weather we repeat so guard your family with hot Cream of Wheat!

@@denickite I do not remember a cream of wheat song. The recipe I use is 3 tablespoons of cream of wheat, 1/2 a cup of water, and 1/2 a cup of whole milk. And I nuke it for two or three minutes. I used to put cinnamon sugar on it but maybe 10 years ago I tried Smuckers seedless red raspberry jam, and that’s what I use now. In fact… I just remembered, I had cream of wheat for breakfast this morning lol. ☺️😉🍵🧋 have a wonderful weekend! 🌸🌝🌈✨🌷🐝🦋

We had Cream of Wheat and Wheateena always with raises. I'm 60 and still love them.
My Momma's favorite was Buttered Pecan, also... When I miss her too much, I get a pint of it and watch a movie she loved. It makes me feel like she's still here, sometimes.
Most Likely the ice cream formula that you enjoyed with your dad changed over the years. Corporations change formulas to decrease costs and increase profits, opting for lesser-grade ingredients.
There is no sadness when there is cake! 😃

You're correct, Emmy! You get crinkly tops on brownies by adding the sugar into warm fat (melted butter) and letting it melt and dissolve a bit, which then rises to the top and caramelizes. With the sheer amount of brown sugar in these blondie-style bars that seems pretty inevitable, you don't even need extra fat than the vegetable oils incorporated into the Bisquick 😁

It's simpler than that. The more you beat the batter, the more you'll get the crinkly top.

I use Bisquick to make impossible quiche. To measure take the bag out of the box, and it opens wide enough to scoop with measuring cup. Then just put the bag back in the box.

Have you ever made a Greek Honey Cake?? Its one of my all time favorite types of cakes. It doesnt have a frosting. I like to think of it more like a sweet bread. Like banana bread. I usually make honeyed candied oranges to top it with or sometimes lemons. and just drizzle honey all over. I definitely recommend trying it. Its a super simple recipe. :)

My grandparents used to eat butter praline pecan. It's richer than plain pecan ice cream
This is similar to something my mom accidentally made by combining a Jiffy cake mix with a box of Jiffy frosting mix, along with slamming the oven door at one point during baking. It was wonderful! I never could get her to repeat it. Now , I know how . Thanks Emmy!

we have a similar recipe we always make for the holidays, brown sugar nut chews, basically a blondie. ours has a bit of butter in it, they don’t age well, get very hard quickly so you have to wrap well.

My friend's grandma uses the same base of cake for her fruit cake. The only difference are the candied fruits and the spices she puts in them. I always get one from them every xmas.

My grandma does that with her fruit cake too! I’ve always preferred it that way, cuz it’s less unctuous and more of a gooey dessert. 😊
Seeing the ingredients and the results, as Emmy said, this is pretty much like a blondie; a brownie without the cocoa. That recipe called for pecans but you could use walnuts (pecans taste better, though). You could even mix in chocolate chips. Bisquick, Jiffy Mix (Pretty much the same, different producer) and similar have flour, cornstarch (makes the results fluffier) baking powder, salt and even some fat in it already; you just need to add liquid. Lacking that, you could use two cups flour, a teaspoon of baking powder, half teaspoon salt and half a cup of vegetable oil instead.
It's a lot easier to measure the bisquick if you take the bag out of the box before pouring. Cut one of the corners instead of opening the whole top and then it won't fly out everywhere.

My method is to scoop it out with a smaller measuring cup and use the small cup to fill the bigger cup.
Emmy, for future reference, you can avoid the mess by spooning the Bisquick into your measuring cup instead of trying to pour it from the box. You could also transfer the Bisquick to a flour container for easy access; just label it carefully to avoid future baking disasters by using the wrong product!

That's what I was going to say too. Also, spooning it into the cup would be the correct way to measure it anyway, since that's how you should measure flour.
My mom made something so similar that she called blonde brownies. They were my step dad’s favorite - he didn’t eat chocolate. No Bisquick, though. I need to try these!

Just an FYI if you cannot find Bisquick in your area. You can make your own at home. 6 cups all-purpose flour 3 tablespoons baking powder 1 tablespoon salt 1 cup vegetable shortening, cubed Instructions Add the flour, baking powder and salt to the bowl of a food processor. Pulse ingredients for about 15 seconds. Add in the vegetable shortening and pulse the processor until the mixture resembles cornmeal. I do mine by hand with a cut in tool. Place homemade Bisquick into an airtight container and store within the refrigerator for up to 3 months.
My grandma has a recipe like this! She calls them "pecan bars". They are one of my faves!!
Food memories are a funny thing- when I think of pancakes, I remember my dad and “fish and chip” dinners as a kid- because I didn’t like fish much as a kid, but I LOVED when we had it for dinner because dad would make extra batter and use it to make crepes which he would slather with butter, sugar and fresh lemon juice!- yummmmm!🤷♀️🥰🥰 I miss my dad- and “fish and chip night”👍🏻🥰🥰🥰

@@Scribbleshow Yum, that sounds so good. I love chocolate. My sister will sometimes buy treats and wind up giving them to me because she says they're too chocolately and I tell her that's a concept I can in no way understand. Lol Too chocolately doesn't exist in my world!
That whisk is my favorite mixing tool. I have been using that style for around 30 years and it is a blessing for any batter that is thicker than pancake batter. It is also much easier to clean than a balloon whisk.
A crackled top on brownies is due in part to the whipping of the eggs :-) the additional air incorporated into the batter results in something like a meringue

Measuring Bisquick - use a half cup measure to dip, and squeeze the box slightly hexagonal. The crackley brownie top crust is the sugar, you can make it on any cake by sprinkling extra sugar over the top just before you bake.

When I was young we would beg Granny to make a sad cake, which to us was Pound cake with an underdone streak in it, lol. That "sad streak" was the best part, so moist and gooey! Thanks for conjuring up a great memory for me!
I just made this yesterday and baked in a 9x9 inch square baking dish. Turned out fine. Baked a bit longer, of course. I used 2 cups brown sugar and 1/3 cup white sugar just because I didn’t want to open a new bag of brown sugar. I like them. Basic, simple and tasty. I use that whisk a lot and always for my pizza dough. I love it.
It helps to store Bisquick in a container to make it less messy, kind of like how you would store flour (it also helps to keep bugs and other critters out if you have an issue with that sort of thing)
Back in the day of this cake, there was the rhyme; "A pint is a pound the world around." For some reason, a pound of sugar seems a lot more than 2 cups of sugar. I wonder how this cake would taste with pineapple.
One of the easiest recipes my grandma used to make to tide us over before dinner on thanksgiving or Xmas was sausage balls.They use bisquick. They might have the recipe on the box. But it's basically a few cups bisquick, a pound tube of breakfast pork sausage and shredded chedder. You mix in the sausage and bisquick until it comes together and then mix in the cheese. My grandma used a couple tablespoons full of milk. Then you roll them into walnut sized balls and bake em. They turnout like cheesy sausage biscuit balls. So good to dip in a basic white gravy. She would make trays of those to set on the livingroom tables. Along with cheese crackers and different kielbasa summer sausage, pepperoni and Genoa salami. Plus different cheeseballs. I always made Thu mistake of not eat I g before going over and be hungry when I get there and almost fill up on just the snacks. I usually ended up hardly eating and taking home alot of leftovers. It was wierd. Not many people like candied yams in my family yet my grandma would make like 4 pans of them. I'd always end up with at least 2 and a half or 3 of them when I left.same with stuffing.the ham would hardly ever be leftovers. Same with desserts.But I was lucky. I never sake my grandma nor expected any presents for birthday or Xmas from my grandparents. I told them when I was 20 to use the money for themselves. My grandma was like no we want to get you something. So I said ok. A pecan pie. Make me a pecan pie that's all. So every Xmas there was an extra pecan pie just for me. She would wrap it up and give it to me to take to my car So it didn't get eaten. My uncle saw me taking it to the car one year and he threw a fit because I was stealing stealing pie. My grandma top him as he sat there unwrapping a 200 dollar tv he asked them for. My grandma told him that's his pie. His Xmas gift. Out of everyone here he's the only one that cares about mine and your dad's finances. He won't let us buy him a gift for instance like a 200 dollar tv. She just glares at him. He just shut his mouth fer that. My grandma shamed him for try in try in start drama during the holiday.
When it comes to baking, sugar is considered a liquid ingredient generally. The oil in the Bisquick helps with creating moisture content as well. These look amazing! Any similarity to blondies? Thanks for recipe.

The weird crispness is from a combination of egg and sugar without the large amount of flour for firmer structure. I have a recipe for this thing called scotch goodie that is mostly egg and brown sugar and it's so weird but it's so tasty.

I make a version of this weekly...2 c. Bisquick, 2 1/4 c. Brown sugar, 4 eggs, add in any number of fun mix ins ( chopped nuts, butterscotch or chocolate chips, coconut, my current fave is toffee bits & finely chopped pecans) also love 3/4 c. Oatmeal & 11/2 c. Butterscotch chips. They are like a wonderful blondie brownie!! 30 mins @ 400° 9x13 pan. Mindlessly easy and so delicious! I parchment line the pan for easy clean up and ease of cutting.
Bisquick is so underrated. Makes the best pancakes and poofy dumplings. My mom never used anything else for her chicken and dumplings

Thank you Emmy for telling me what the heck Bisquick even is, as it’s an ingredient (?) that doesn’t exist in Sweden, where I live. I love the name of the cake, it’s so funny! A very popular Swedish cake is the “sticky cake”, which is pretty much like a mud cake or brownie, but made especially to be slightly underdone in the middle so it’s sticky, like the name implies. It’s one of the first things many Swedes learn how to bake. One pound of sugar for one cake sounds like too much sugar to me, I don’t know how much I’d like this sad cake after all!

Your little story about your dad's favorite ice cream got me thinking about how I chose my favorite candy bar. My favorite candy bar is Butterfingers because not only is it really tasty but because it's my dad's favorite. It being my dad's favorite is the reason I tried it in the first place. I'm more likely to eat Reese's Peanut Butter candy anything, but I always say my favorite candy is Butterfingers.

My parents always kept Bisquick in the kitchen. I don’t remember “sad cake” ever being made in our house, but we had lots of pancakes, biscuits, pies, casseroles, and other foods involving Bisquick. I haven’t eaten any Bisquick for decades now, though. Maybe I should buy a box of it and make something, just for old times sake.

Emmy, sugar is a wet ingredient. There's oil (and more sugar) in the baking mix. The eggs are not the only thing making your cake moist.

If you want an easy way to get in the bisquick bag, you need a measuring cup that's oval instead of round. I can't remember for the life of me where I got mine (probably inherited) but they've worked so so well with flour and other dry batters like pancake. OR just take the bag out of the box and then you'll have more space to fit the cup in lol
My Sad cake recipe has oil and coconut in addition. It is definitely a bar cookie, but with the addition of the coconut it makes it chewier.

Thats basically a brownie recipe without the butter. The crackly top comes from the sugar and eggs. If you want that signature glossy crackling you have to make sure to really whisk your egss ,sugar, and butter till its silky and makes nice ribbons.
