    Italians can be tough, and most likely, tend to raise eyebrows whenever somebody offers a different or a more personalized interpretation of an Italian cuisine. It is interesting sometimes because they clash amongst themselves, because their technique also at times differ from one Italian person to another. These are difficult times, and no body deserves to undergo stress just to figure out whether their recipe is legit or not. Although it is good to keep things as traditional as it can be, I totally understand, but for me, however you make it isn't really important. Because what counts is that you're making something that puts joy and love onto the plates of the people you're cooking for!! I just love your technique, spirit, and energy, Marion!! Please continue cooking and sharing our recipes!! Oh yeah, I put aubergines in my sauces too!!! So, thank you for putting this out there!

    Pasta noodles came from China to Italy because of Marco Polo it makes sense to add some Asian soy sauce to some Italian dishes. My hubby didn’t have herbs when he was cooking bolognese out of town so I told him to add soy sauce. He was blown away. I love when you do your Asian spin on “western” dishes. Your Tuna Pantry pasta woke up my bored taste buds during the pandemic. The best fusion pasta dish I’ve had the pleasure of eating. Thanks 🙏 😊

    I’ve been using eggplant in Bolognese for 20 years I also add bacon, soy sauce, Romano cheese and a bit of basil pesto at the end for creaminess. It’s delicious 🤤 Then I just kept making traditional bolognese from scratch and stopped. Thanks for this! ❤

    Love the idea of using star anise. Gonna definitely try that. Also appreciate the pointer about eggplant. Gonna try that, too! I usually put fish sauce in mine. As you probably know, it's the secret ingredient of many Italian chefs. I'll try a little soy sauce, too!

    Ciao, this looks very delicious, even i would eat Bolognese with tofu.. If you like pasta too, like i do, try Spaghetti all' assassina, this recipe is from the area in puglia/southern italy, where my father was originated from, so i wish you all a wonderful Weekend, many greetings from brunswick in germany and please stay safe 🙃

    I am now an absolutely dedicated fan of your cooking Videos Marion. I made this recipe for my dinner tonight and I will be carefully freezing the remainder for dinners to come. The only alteration I made, was that I used my Ghee to cook the vegetables in, as I only had Extra Virgin Olive Oil which you said was not suitable until later in the recipe, where I then used it. As I’m 78 and my grandchildren were not staying with me as it’s a school week, I know I’d be able to slip the eggplant past 2 out of the 3. Their Mother is a wonderful cook and they are really quite adventurous though noses were turned up after them asking me “What is that plant Granny?” 2 out of the 3 were not impressed. However, after eating this impressive meal, they would then accept the fact that while it might look strange on the plant, it actually tasted really wonderful I know. So I made the full recipe and as I live alone now, I’m going to carefully freeze the remainder in portions and next time they are here I will share this delicious recipe with them. Tomorrow will be utilising the Rice I cooked today, for your marvellous looking Leftover Fried Rice. I will alternately be using some of the last of my Italian Green and Butter Beans as I have no Broccoli in my fridge . I think that recipe as you have made it will only have one other problem, which is that I have neither Thai Fish Sauce nor your Thai Soya Sauce, so it won’t be QUITE as you have made it. I shall get my Carer to take me shopping next week. Fingers crossed Thank you Marion, I’ve been reading through your Recipes and I can see you are a WONDERFUL Cook.     Eggplants sounds interesting might try it tomorrow :) I've always added soy sauce in mine, just seems to make sense but lots of red wine for me is a must, most will evaporate anyway and it really is the key flavor for me personally. As for veg I love olives, mushrooms carrots and green onions (another key one for me).

    Thank you for the inspired dish. I have never thought of adding eggplants to Bolognese but it makes sense. I add fish sauce instead of soy sauce though. For the star anise, I have to try that. wouldn't it overpower the dish?

    OMG, I love egg plant in my mince/pasta dish. Sauté 1/2 inch slices with salt, pepper & paprika then add to pasta/mince. Yum o.

    I’ve always love your suggestion of adding soy sauce and star anise to meat sauces - it adds so much flavour! I do wonder if using miso might get a similar effect? Only one (hopefully delicious) way to find out…

    Marion that was the best SpagBol im going to give it a wheel its good to experiment make it your own. i just wonder what Italians had before Tomatoes maybe they used allot of olive oil and garlic possibly red wine

    All that was shown at the end was putting the watered down sauce on the pasta-to coat the pasta and keep it from sticking together. Was more bolognese sauce placed over the individual pasta servings? Otherwise, love the video and will be adding eggplant to my pasta sauce. I usually use grated zucchini, but I’m going to give this recipe a try.

    No the whole point is to add the sauce and the pasta water and mix it through.

    Despite popular conception, Bologna did not invent this type of meat sauce. Every city in northern and central Italy has their own variant, and every family within that area has their own recipe. I'm still not sure why everybody refers to Italian meat sauce generically as Bolognese.

    If you want traditional then that route. If there is a short cut to accommodate your needs ?..go for it. But you can’t call it Bolognese Raghu. That’s it. Bolognese style maybe.

    Surprised to hear that you know about the tomatoes only being introduced in the 14th/15th century but you don't know that there is no bolognese made anywhere in Bologna* it was in an episode of top gear, when they got there they had to order bolognese 😅 it was a hoax joke*

    Why do you not peel the eggplant? I personally do not like the texture of eggplant. The skin of it is very noticeable in the sauce.

    Vincenzo is so annoying I unsubscribed from his channel just because of the video where he pans your miso carbonara. Soy sauce is good friends with tomatoes. I add a couple of teaspoons into my stew or soup whenever tomatoes are a major component of it.
