The Big Fat Surprise - Why Dietary Guidelines are Making us Fat | The Empowering Neurologist EP 161

Ғылым және технология

What underlies the war on fat? It’s big business, wanting us all to eat more refined carbs and sugar to replace the fat calories that we’ve been instructed to reduce. And I can think of no one who has done more to open our eyes to this ongoing travesty than Nina Teicholz. Here’s more about her from her website:
Nina Teicholz is an investigative science journalist and leader in nutrition reporting who is challenging the conventional wisdom on dietary fat-particularly, whether saturated fat causes heart disease and whether fat really makes you fat. The New York Times bestselling author of The Big Fat Surprise. Teicholz also serves as Executive Director of The Nutrition Coalition, an independent non-profit group that promotes evidence-based nutrition policy. She is one of a new generation of researchers arguing that diets lower in carbohydrates are a scientifically sound approach for reversing nutrition-related diseases.
For more than half a century, we’ve been told to eat a diet high in grains, low in fat, saturated fat (and cholesterol), but the last two decades of research have led a growing number of scientists to conclude that this diet, despite being rigorously tested, could never be shown to prevent any kind of disease.
Teicholz’s work also explains why this diet has remained official policy for so long: the roles played by crusading scientists, the food industry, and more.
The story is as much about politics as it is about science, and Nina Teicholz’s research ultimately confirms that the traditional foods we were told to abandon (meat, cheese, eggs, butter) are safe, and even good for health.
Nina Teicholz has been called “The Rachel Carson of the nutrition movement.” Her book has been called a “must read” by some of the most prestigious medical journals in the world, including The Lancet, The BMJ, and the American Journal of Clinical Nutrition.
In speaking about Nina, the immediate past-president of the World Heart Federation, said at the Davos Cardiology Update Davos (2017) “She shook up the nutrition world, but she was right.”
Please enjoy this compelling interview with one of my personal heroes.

Nina Teicholz is a science journalist and author of the New York Times bestseller, The Big Fat Surprise, which upended the conventional wisdom on dietary fat-especially saturated fat and seed oils. Teicholz is also the founder of the Nutrition Coalition, a nonprofit working to ensure that nutrition policy reflects the best and most current science. Teicholz has appeared on most major TV networks, and her work has been published in the New York Times, Wall Street Journal, the Economist, as well as in academic journals including The BMJ and the journal of the National Academy of Sciences. She is a graduate of Stanford and Oxford Universities and is now author of the “Unsettled Science” column hosted on Substack.

Once you realize that your goal should be a low insulin diet you see fat in a new light. It is high insulin levels that turn carbs and sugars into fat and you may be surprised and I would hope to see more videos on a huge secret. Things that jolt your system and cause high insulin levels including sugar free sweetners. Yes diet colas make you fat not because they contain 9 spoons of sugar like regular cola but because they spike your insulin levels 300% anyway. This is also the purpose and reason for so many food additives. Hidden MSGs under a wide variety of names including healthy sounding names make you fat and cause cancer. To fatten lab rats they breed what are called MSG rats and that is the real name on the invoice when they are paid for. Hidden MSG glutamates spike your insulin levels 300% or more and make losing weight super tough. One really horrific one angers me and that is Vegetable broth in tuna, even super premium brands. This is really fermented soy which is how they make soy sauce and this causes horrific migraines, blindness, nausea and increase your risk of cancer and tumors. As a person who is sensitive to MSGs it angers me to get a blinding painful migraine headache and have to lose work due to "VEGETABLE BROTH" in something I paid double or triple the price for to avoid getting sick. Other hidden MSGs are cultured celery juice... sounds delicious right? Extract of paprika... sounds delicious. Natural flavor. Who could be against natural flavor because it is natural right? But then Rattlesnake venom is natural as well. There is hydrolyzed proteins, textured vegetable proteins, and even gelatins. Have you ever tried to lose weight and ate lots of sugar free gelatin? First of all the sugar substitute spikes your insulin as does the altered proteins of the gelatin. Gelatin is made from rendered dead animals including dead pigs, horses and even roadkill. Ever hear of Kosher Gelatin? That just means they left the pigs out and this is not a joke. There is dextros and maltodextrin as well. I could go on and on but now when you shop you should read the labels and see these are in all foods it seems in the store and most if not all of them are not to keep it fresh but to pack on weight. It is true that Americans should exercise more but their diet is being spiked with high insulin causing additives and this is the real reason for our epidemic in obesity and diabetes. Perhaps they think this is how they can feed 7 billion people but it is causing the majority of our cancers, obesity and heart disease and the early death of millions.

It’s ironic. I grew up outside of United states and my parents and grandparent owned a farmland, all they fed me was eggs from our chickens, goose meat and beef stews, lots of pork belly fat, lard, homemade butter, cheese, heavy cream from our cows, rabbit meat. No rice, or starches, we never needed bread, or macaroni, only organic veggies and berries from our garden. And I was always strong, never sick or fat, happy, healthy kid, super fit. And when I came to USA I was so surprised how many people were afraid of overeating eggs and avoided butter, everything low fat, so much salad. People were scared of high cholesterol like it’s some kind of disease or scary cancer. But in reality that is what made humans strong. I am so happy to see doctors finally talking about how meat, eggs and animal fats are essential for healthy body and brain function.

You can only ever effectively kick your body into burning its own fat if you avoid those damn carbs which switch on insulin and suppress leptin. Insulin is lipogenic, so it matters a great deal what you eat and not how many calories you eat. When you are burning your own fat you simply do not get biological hunger, only psychological "cravings". When I learned this, I was able to put behind me 40 years of eventually failing diets, yo-yoing back to being a fatty. 15 months ago I started low carb fasting. I lost 45lbs, dropped by A1c, increased HDL, lowered TGL, shrank by belly and fatty liver, stopped 3 medications and now am in the new normal of 1 or 2 meals a day. with all that weight still off. I am 70. In January my doctor informed me that my sugar levels A1c were diabetic, at 6.7. I was shocked, as I considered that I had a low sugar diet, no soft drink or ice cream etc. So I researched and decided to dry a Keto diet. Taken a while to initiate change, but I have now initiated changes to my diet that are not only sustainable but also enjoyable. After a blood test last week my A1c is now 5.3, normal, not even prediabetic. My blood pressure is now 130/85, when it was always 140/85. I have lost 7 kg ( 80kg down from 87kg ). I feel so much better. I sleep so much better. I used to wake up around 2pm and was restless for an hour or so. My skin seems to be much clearer. Reduced little red spots. Even if I miss a lunch I do not feel hungry. I cannot believe I have achieved so much in 3 months. Looking forward to refining my diet by trying new foods. Bought some Kimchi for the first time last week. It is delicious. Looking forward to trying some recipes that use it.

The food pyramid is a lie and upside down. Also In a perfect world we would eat seeds but zero grains and use only olive oil in foods. Never eat oats (Though I love them) never eat tomatoes or eggplant (though I love them) Like so many oils, tomato skins and seeds are what scar and damage your arteries which causes the plaque buildup. Its not clogged like a toilet. Our arteries clog from self healing. It is really more like a scab upon a scab upon a scab until it restricts the flow of blood. We all know you don't breath volcanic dust because it is like tiny super sharp glass dust that makes your lungs bleed. Have you noticed how itchy and caustic tomato plant stems and leaves can be on your skin? Eggplant and Tomato seeds and skin do to your artery walls what volcanic dust does to your lungs and when your body tries to heal the damage it causes the build up we have always blamed on fat.

Avoided diet drinks And that’s it. It was shockingly simple actually. Didn’t feel better or worse, didn’t have more or less energy. I've been on keto for a few years. Comparing my pre-keto bloodwork with my post-keto bloodwork, my lipids improved under keto. LDL - went from 145 to 108; HDL - went from 63 to 74; triglycerides from 67 to 57; A1C went from 5.7 to 5.2. Overall, my bloodwork IMPROVED while doing keto but not massively so. However, I am 30 lbs lighter which I think is HUGE. The big change has been my energy. I retired at 63, overweight and exhausted. On keto, I've failed at retirement and started a ship surveying business and very busy. I have also started playing squash at the YMCA. I have a massive amount of energy compared to pre-keto. The other day, I was inspecting a ship and going into cargo and ballast tanks. The much younger crew couldn't keep up with me.

Thank you guys soooo much for spreading the word. I went on a ketogenic diet a few years ago because I wanted to lose some weight. What I didn’t count on was how amazing I felt. My arthritic pain started to subside, I had a mental clarity that I never experienced before in my life and my energy level was much higher. I was excited to share this way of eating with my overweight family, but it was just falling on deaf ears. As a matter of fact, some were criticizing me for being too lean when I never felt so good in my life. Unbelievable!

I got horrible health, because i grew up mostly non carnivore, eggs. Mostly grains, sugary things, cereals, bread, milk, baby formula. After that, as an adult, i ate mostly pasta, bread, little veggies ( no much veggies, fruit, because i did not liked them as a child and adult ). I developed asthma drinking processed milk during my pregmancy ( my baby was born with excema and bronchial weezing ). At the same time i ate mostly again pasta, bread and y also had horrible asthma attacks every day eating grains and drinking milk. Soon after i allways felt in a coma like state after eating this and drinking milk. Later i could not eat anything without turning in a coma state after eating. For decades. I can only eat before bed time to avoid getting completaly exhausted and horrible attacks of sleep- coma. I now eat meat every week and i allready feel things changing in my health. Its a very long road. If we can not buy meat, organs, fatty, eggs anymore, i think i better die. Because i do not want to live with my health issues anymore and mental breakdowns. I blame all doctors who did not help me out, instead made no real difference and ruined my health more.

I throw in a 1 day fast once or twice a week depending on how I ate that week. I've dropped over 30 pounds and feel great! Started weight training too. Not always possible with life stuff going on to eat only whole foods but most of the time I do. I only have about 10 pounds to go as far as fat loss but I'm being more active on the weight training so probably won't see the loss on the scale but more my shape in general and how clothes fit. There are abs under that barrel! Stuff no longer jiggle when I walk. I can even run some now. Getting stronger!

Personally, I did horribly on keto - the worst calf cramps ever and then I was really cranky. The only relief was to increase the carbs. I felt better on vegan but it was hard to maintain. The thing that has been absolutely transformative to me has been the glucose revolution - reducing glucose spikes, while maintaining a whole foods diet and taking berberine. Within 2 weeks of that I felt like a new person and started losing weight and was able to narrow my food window without trying. I sleep better, feel more peaceful, and don't have any cravings. I can eat some fats like butter, ghee, avocado and coconut oil and stay away from eating lots of fruits, but I can eat them if I eat food in the order of veggies, fats and proteins, starchy foods, and then fruit. It totally works too. I think I will be settling on the Mediterranean Diet because that's the best studied in terms of longevity. For me, I want lots of phytonutrients and enough protein while avoiding glucose spikes. That has been totally key.

Thank both of you very much for an outstanding conversation about a topic very important to me. The dates about the early 80s are correct about the obesity rate. I was in the military during that period and started to notice soldiers starting to become disqualified for retention due to being overweight. That trend continued to get worst until I retired after 30 years. When I came in the military in 1955 no one had a weight problem, ever. That is not the case now in the military. I am not overweight now and never was, but I also never followed the US guidelines about the way I should eat. It just never made any sense to me to consume the amount of carbs that was being pushed. The name of your book Nina say it correct. But just think about how long we have been living the big lie about what we should eat and how many people have died trying to follow those rules. You are so right about the old outdated moderation rule. The US can and should look at the effects of obesity on having a Ready Force . That mean joining the force and retaining what you have. Someone need to wake up or we are going to be in it deep.

🎯"food pyramid" will surely GIVE us "a very fat bottom" as well~ YES. Interesting to note that, as a mother raising my children, I made myself eat a low-fat/grain-heavy diet for decades. Yet something innately drove me to feed my children extra protein & fat, & very little grains or other sugars. I believe it was based on my knowledge of the composition in breast milk~ which is what they start out on. Something told me that it only made sense to continue feeding them what I had learned would support their developing brains & bodies, but I didn't apply it to myself. Perhaps I also figured I was already 'corrupted' into buying off on the propaganda, but I wasn't going to have any such thing for my children? I'm not sure, but I am certainly grateful to have the knowledge available now, at 57 yrs old & reversing decades of damage done while NOT eating an optimal diet. So truly grateful to all who have invested themselves into the research & then providing it for the rest of us. THANK YOU.

For the first time in years, my triglycerides are well within range, my A1C is normal, my BP is back down. It's always great to hear Nina. I went lo carb with Atkins to take off 30+lbs I intentionally put on for work, what I couldn't do at 175 for more than 30 minutes, I could easily do 12 hrs at 210. Then I changed my form system, can do same work just as efficiently at 170-. I went off lo carb for @4-5 years as I was involved in feeding homeless program using SAD. When the lockdowns came and we had to cease the program, I've been edge of ketosis since. I test strip occasionally, just barely keto. I don't need or want to lose weight, I'm cut and ripped, prominent abs, unintentionally, perfect health at 63. So I just stay on the edge to maintain my health. Every month-to-month and 1/2, I indulge high starch and some seed oil, never sugar or HFCS, etc., for a day or 2. I'm not deprived 😅

Nina albeit I agree somewhat with you regarding diets, I have found the Carnivore diet not the case. Actually I’m never really hungry & feel immensely better. I have remained on the diet for over 2 years now. I have during hollidays I have cheated with old family favorites. My tastes have changed. The foods I once craved and truly died for don’t enjoy them as once’s did. And after eating felt bloated and lousy reinforcing my path on the Carnivore diet. As a physician those who chose to experiment with a strict Carnivore diet have improved greatly with their chronic illnesses and no longer need medication. Yes diet is putting me out of business. Please climate change is a total hoax. What percentage of our atmosphere is CO2? 0.04% and that is necessary for the planet to exist. Climate change is a way to charge people to breathe. More CO2 plants grow better. Climate change is a political conspiracy to redistribute wealth and control the world’s population. Dr. Ginge. Yes like De. Pearlmutter says you are a hero on presenting the lack of science in the American Nutritional Guidelines.

@@jackd1582 never claimed to be one. As Nina will tell you nutritional science is for most part garbage. Go carnivore for a month. After the first week of bowel adjustment you will feel immensely better. You will sleep better, your mood will be better, more energy, no bloating, no flatus. No hunger, your grocery bill will be cut in half as all you will be purchasing is meat, salt, butter, eggs. Meow 😁.

Lost 100 lbs last year in my early 50's after going carnivore for 9 months. I am still down 90 lbs after a week at Disney :-) and confident now it will be easier than ever to shed. My wife also lost 60lbs. To say discovering keto was life changing would be undercutting it. I needed to be convinced to make that kind of a change and Nina does a great job of pulling back the curtain allowing us to shed false beliefs we've been indoctrinated with since our youth. Thanks to folks like her and Dr Perlmutter the word is spreading (albeit slowly). I know I sing keto's praises whenever I have the opportunity. Anything but the SAD.

Great interview, growing up as a young man working as a construction labor doing hard physical work everyday, for lunch and dinner my body craved real food primarily protein from meat, High carb and sweet sugary foods wouldn’t cut it and would leave me feeling lethargic, similar to today 40 years later if I’m listening intently to my body and I’m satisfied with what I’m eating it’s going to be real food!

Intermittent fasting, like 16 to 20 hrs, seems to be something I can do forever. I have been doing it for 5 years or more and don't have reson to stop. I'm not 100%, but most of the time, I don't think about it, and it's something I do most of the time.

As a dietitian, I largely agree with what has been discussed here. In my lectures, I consistently emphasize how our dietary guidelines are evolving to adapt to our gradually expanding population. When I began my undergraduate studies, the Acceptable Macronutrient Distribution Range for carbohydrates used to be 40% and above, but now it has increased to 45% and above. Similarly, portion sizes have been gradually increasing. Additionally, the guidelines suggest that individuals in all life stages should consume approximately 3000 calories per day. It's no surprise that we are experiencing a generation with high obesity rates. Another interesting fact is that when you calculate your Estimated Energy Requirement (EER), consuming half of that amount is generally sufficient. While I don't advocate for strict calorie counting, having an understanding of nutritional concepts is indeed important. Personally, it's one of the reasons why I decided to transition away from clinical dietetics, as I felt constrained by the guidelines that needed to be strictly followed, and yes carbs should be limited to as low as 20-25% just to run that cycle to prevent the depravation (if you know what I mean)

Nina is a breath of fresh air for me. I am aware of the time period about the food we should eat. I remember when I went into the military in 1955, being overweight was unheard of. The 1980s was when I started to see an increase in the weight of military personnel. In my opinion we are headed down a road of unmanageable health care unless drastic changes are made in our food guidelines. The indicators are all around us. When just being overweight begins to look normal and heads are only turned when someone is obese, we have a problem. I know change will effect some companies and personal but, in the long run our country will be in a better place. People trusted the Government to do the right thing . Another 43 years on the road of current dietary guidelines is unsubstainable for a healthy nation in my opinion. You are correct about the vet asking about "what does the animal eat". My dog's sugar level was high when I was asked that question.

I follow the guidelines and BEYOND... 80% carbs 12% fat 8% protein 0 junk food, oil, animal products. I'm 55, thin, happy, healthy, and I have 1100 videos about health, diet disinfo/wars, weight, diabetes etc.

Every diet I was ever on ended after 6 months. Until last year when I went to a low carb (not keto) diet. And I'm still on it now. It has changed a little (I increased fats and decreased protein). On my dieting days I eat about 100 net carbs (35 grams of fiber) Right now I'm 110 pounds from my heaviest and this diet I can maintain for the rest of my life. I couldn't do keto. I like fruit too much and lowering my fiber intake is a non starter.
