I just tried your method. I was using a different marinade but followed your method. First, the smell was outstanding! Thank you! The moisture was outstanding. The taste is a no brainer…also outstanding. Because of this, I’ve just subscribed.

That's genius! You squirt water to keep the flare up down! This is an issue I've had for a while and not known how to deal with it; had overly singed chicken wings that tasted like oil and carcinogens.
