This butter mochi recipe is INCREDIBLE. I've had local Hawaiian butter mochi, and I can't believe I was able to make a delicious UBE BUTTER MOCHI version at home!
Other ube butter mochi recipes just use ube extract, which still makes for a delicious butter mochi. I decided to add ube jam, aka ube halaya inside the ube butter mochi to level up my mochi game!
How to make ube butter mochi is easy. How to keep yourself from eating all of it...that's a whole 'nother beast.

- 1 lb (16oz) glutinous rice flour or mochiko
- 2 cups granulated white sugar
- 1 tbsp baking powder
- pinch of salt
- 5 eggs
- 1/2 cup melted butter
- 1 can (13.5 oz) coconut cream or coconut milk
- 1 cup ube jam/ube halaya
- 1 tbsp ube extract

    I’ve made ube moshi but i put in shreds of coconut in the batter and i toast coconut for the topping. I’m making this recipe with coconut today! Thx for ur sparkling personality and awesome recipes! Mahal kita! ❤️

    I'm OBSESSED with ube! I mean not only does it taste amazing, but that colour -- what's not to love? It's the greatest flavour in the world, followed closely by pandan. Non-Asian people really need to let go of their over-reliance on boring chocolate and start discovering these other amazing flavours.

    I made this today. Everything went exactly as planned, but my bake time was only 30 min - not 1 hour. It was starting to get a bit dark - but a tester came out clean. It’s cooling now. Can’t wait. 😀

    Made it with 1cup cane sugar and 12oz ube halaya. Delicious either way. Id have to try steaming it instead of baking so that the outer layer isnt too burnt. Thanks for the recipe!

    would you recommend increasing the amount of extract if i don’t have the halaya or will the 1 tbsp suffice for full ube flavor? also, do i need to adjust the temp / baking time for a 9x13 baking dish? TIA.

    If you pipe the ube halaya at a much colder temp than the batter will it be less likely to melt completely into the mochi? Just a thought. Excited to try this!

    I just made this! I used 1 cup of sugar and put small dollops of bottled ube halaya, and it's so good! The ube halaya really adds to the ube flavor. Thanks for sharing this! >^.^

    Just made this and it's amazeballs! HELP - How should you store this? Leave out on the counter in an airtight container or refrigerate? Don't want it to get super hard in the fridge, but don't want it to spoil or be harmful to eat if left outside.

    My mom used to make fake use with chunky acorn squash and coconut milk, with sugar, still delicious, but the real thing was different. It was when you couldn't get the real thing, so you made do. At least she never made pandit with spaghetti, which another mom had to make do with!

    I think doubling it would be all right! Just check the texture if the tray you use will spread the butter mochi thin
