Any reason why the steak wasn't seared at the end on the Evo? Is the surface temp of the evo nowhere near what the temp of the skillet was on the grill? 🍳

When I make tomahawk ribeyes, I cut a few slits in it and insert cloves of fresh garlic into it. The fresh garlic cooks inside it and gives you bonus flavor when you get to those areas. I also marinate the steaks for at least 24 hours prior in soy sauce, Worcestershire, cracked black pepper, and garlic powder. As far as the Helix mattress goes, I had a Casper for the past 6 years. Just a queen-sized. 2 weeks ago, I upgraded and had a split California King, Sleep Number 360 ILe, heated and fully adjustable bed delivered. It's the bed that I cannot wait to get into after dinner and don't want to get out of every morning. 👍💯😀

I just cooked my first prime cowboy ribeye today. It was 1.5lbs. We use 1 part sea salt, 1 part fresh ground pepper, 3 parts garlic powder, 3 parts onion powder to season. Then, it goes over lump oak charcoal, sprinkled with a few hickory and mesquite chunks. First, over direct heat flipping often. Then, to indirect heat, flipping every several minutes until 125 degrees internal. Rest 10 minutes. That is our favorite "traditional" way to cook a steak to a perfect medium rare on the weber grill. We do enjoy other methods depending in the cut.

If you follow what Sam does here, you will have amazing fries. Outside of the parm/parsley, this is exactly how we made them in my local shop in high school and they were perfect. The cut, the rinse, the soak, the double-fry (blanch, rest, finish), salt immediately -- all of it. We used peanut oil for frying.
I used to eat at a steak frites place in Paris that for the life of me I'll not remember the name until I hit "enter". Picnic, or "family" seating, limited menu, not the best cuts of meat, but lines around the corner to get in. Been there dozens of times, would go back in a heartbeat. Carafes of house wine, green beans, profiteroles for dessert! (Near Concorde Lafyette, still can't remember the name)

I ain't mad at this. I reverse seared my last Wayngus ribeye on my smoker/grill. Effing perfection, best steak I ever had in my life.
Sam, Sam, Sam! With a BEAUTIFUL steak like that, you should have utilized the reverse sear with your Traeger. 250-275 on the traeger and then sear. It’s absolutely the best thing I’ve ever cooked! I love you and the channel btw. You’re the best

You should make a video on how to properly maintain/clean certain things you use to cook. Like what do YOU do to keep your grill looking so dang nice and clean, any maintenance needed for the insta pot? Same with your cast iron... how do YOU clean it, how often do you re-season it, if ever? Do you use soap/water on it ever? I think a lot of people probably are like me and have so many troubles keeping a cast iron clean, I think it would be a great video so I can use mine more and more confidently.

This is why you season the whole cast iron pan. Don’t just do the top because you never know when you need to flip it.

My ONLY add is to smoke the meat for the 45 minutes with pecan wood while bring it to 125*, and may I suggest using an offset grill for the task. Fire is key to carnivorous activity

I don't know if it's bad that I never thought to do it, but the upside down cast iron was absolutely brilliant.
When I was growing up - my mother was NOT what you would call a good cook.....I felt cheated every time one of my friends would go on and on about what a great cook their mothers' were. I was in the military before I had ever had steak medium rare. That tomahawk looked perfect ! One time, when I was a little kid - my youngest brother would not eat his dinner. My dad said to him, "eat your food or you'll get a spanking". My brother replied, "but I don't like it". then dad said, "I don't like it either - but I have to eat it". - - mom...frowny face.......

Sam not in the oven, the pellet or charcoal smoker at 150F until internal temp of......then finish it off on the skillet to sear Also for your fries soaking, you don't have to soak them for 25mins, just put them in a bowl of water then move them around with your hands then pour out the water and repeat one or two more times until the water is clear and no more starch is coming out. Then let dry on a towel. Only takes 5 mins total, not 25mins plus dry time.
