The Best Southwest Eggrolls Ever!! (Chili’s Copycat)

If you like Chili's Southwest Eggrolls you should definitely try this recipe! Makes 10 whole eggrolls for about $30(I already had most of the seasonings). I made these one time for a friend who challenged me to make them and they were amazing and I just want to share this recipe with you guys as well. Hope you enjoy!!
For Eggrolls:
Tbsp of olive oil
2 lbs diced chicken breast
1 1/2 tsp of kosher salt
1 1/2 tsp of black pepper
1 1/2 tsp of garlic powder
Tsp of onion powder
1/2 tsp of cumin
Tsp of smoked paprika
1 diced red bell pepper
1 1/2 cup of frozen corn
15oz can of black beans
2 diced jalapenos
1/4 cup of green onions
16oz bag of fresh spinach
Tsp of chili powder
1 cup of Monterey jack cheese(shredded)
1 cup of Colby jack cheese(shredded)
10 flour tortillas
Canola oil for frying
Avocado Ranch:
1/2 cup of buttermilk
1/4 cup of sour cream
3 tbsp of mayo
Tsp of minced garlic
1/2 tsp of dijon mustard
1/2 tsp of sriracha
1/2 tsp of kosher salt
1/2 tsp of black pepper
Tbsp of cilantro
Half of large avocado
Directions for Eggrolls:
Heat a large saucepan to medium high heat and add olive oil to saucepan. Add diced chicken breast. Season with salt, pepper, garlic powder, onion powder, chili powder, paprika, and cumin. Cook chicken for about 8 to 10 mins stirring occasionally until chicken cooked through. Remove cooked chicken from saucepan and set aside. Dont strain. Add red bell pepper, black beans, corn, green onions, jalapenos, and spinach to saucepan. Simmer for about 8 to 10 mins covered or until spinach has cooked down. Turn off heat then add 2 cups of shredded cheese of your choice. Stir in until all ingredients have been incorporated. Take off heat and set aside to cool down.
Wrap 10 flour tortillas in paper towels and warm up in microwave for 20 secs so that they will be easier to roll. Put about a 1/4 cup of the filling in the tortilla towards bottom. Roll filling in tortillas tucking the edges as you roll. Insert toothpicks to ensure the tortillas dont unfold. Heat 2 inches of canola oil in a frying pan to 350 degrees. Place eggrolls in oil and fry 2 mins on each side or until golden brown.
To make Avocado Ranch:
To a blender or food processor add buttermilk, sour cream, mayonnaise, garlic, cilantro, dijon mustard, sriracha, avocado, salt and pepper. Blend until ranch is at creamy consistency.

    Hey man! Great recipe however I ran into a small issue. The chicken breast and veggies didn't have enough water even after simmering. Should I turn the heat to very low cuz I used medium heat? Any tips would be great!!

    Hola. Puedes usar maíz congelado y porotos negros enlatados. Use una buena marca de porotos enlatados, como Bush’s. 😋

    Replace the spinach with a bag of cilantro and they are alot better, close to the SW egg rolls at the Rainforest Cafe .....and use the eggroll warps not flour tortillas
