Shoyu Ramen
Ingredients
For the Broth (Makes 8 to 10 servings)
6 lb pork neck bones
2 oz ginger, sliced
2 bulbs garlic, cut into halves
1 large leek, cut into half and wash every layers really well then drain
1 1/2 oz kombu, dried kelp
1 1/2 Tbsp chicken stock powder
24 cups cold water
For the Chashu (Makes 8 to 10 servings)
2 lb pork belly or pork butt
For the Tare (Sauce) (Makes 8 to 10 servings)
1 1/2 cup soy sauce
3/4 cup sake
3/4 cup mirin
ginger, sliced
1 clove garlic, crushed
For the Ramen Bowl (Makes 1 serving with below ingredients)
3 oz bean sprouts
1 portion of fresh, frozen (5 oz each) or dried (3 oz each) ramen noodles
2 green onions, chopped
1 soft boiled egg, cut into half
1 garlic cloves

    I really enjoyed making authentic ramen. I copied everything she did. I ate on this for 3 days. I thought I was back in Japan. I can't wait to try another recipe. This is a keeper.

    I decided to commit and cooked this with a friend of mine. The total cost of ingredients at our Asian market was 71 dollars. Made enough to feed 4 people for two whole days. Was absolutely delicious! Never cooked anything from scratch before, and this was hands down the best thing I've ever cooked. Thanks for the video!

    Definitely try and find somewhere else to get these ingredients these ingredients only cost me around 20-30 dollars without spices and basic aromatics.

    Thank you for sharing this recipe! I'm a (former) professional chef and I visited Japan in 2015. Since then I've tried to recreate the ramen that I had on my visit and this took me right back to that time! Absolutely delicious and worth the time and effort.

    Made it today! Whole thing cost about $40 to feed 3 people. We each got seconds AND theres more than enough for tommorrow! Although, I couldn't find kambu but my local HEB had umami broth. I sprinkled a packet of that in there and it was amazing!

    Miel, you don't have to use this recipe. Find one that is simple. Real ramen soup will make your heart and stomach happy. You will never eat that packaged stuff again. This recipe sounds pretty involved. Look around - you Will find one that works for you. Don't give up on this. You will be rewarded. Yummm.....

    The only thing I do differently here is I roast my garlic and ginger - just to give a nice robust and deep flavor. Additionally, I typically always soak my eggs in soy-sauce, sake, sugar, and mirin for 1-2 days in the fridge, they yield excellent flavor. One more thing - creating your own ramen noodles from scratch is easier than you think! Take a weekend to learn it, it's a lot of fun and a lot more delicious. None-the-less, excellent video for beginners.

    That's the best thing about ramen. There's a lot of variety and combinations that no one recipe is the "correct" one. I add some slightly roasted onions and dried fish myself.

    This was sooooo amazing! I cooked for my girlfriend for the first time for valentines day and she was blown away by this, the pork belly came out perfect. The only additional step I did is boiled the pork belly in a seprate pot first, similar to what you did with the pork bones, and I had to add more water as the broth was low @the 3 hour mark. Keep it up! Can't wait to try another one of your recipes!

    Florian Koehler-Wedderburn In the US, we have Asian markets and they have pork bones. Try looking for that??

    Are you allowed a crockpot or hot plate? Can you cook meat (like for 3 meals) at your folks and freeze it ?or You can buy precooked meat like tyson grilled chicken for example... and frozen or canned veggies..cook them in the crock pot or Add them to those microwavable ramen bowls

    Love this channel, and enjoy your presentation format. I admire your commitment to making these recipes for your family. I got disenchanted with the amount of time and pots and pans this requires. But, on a day when I have access to time and the ingredients. (Will gather the one or two things I need, and will make my sauce and broth on different days), otherwise, I will torturously drool over your videos. Or maybe, I will need to live in the South Pacific again. Hmmm! Maybe teaching there is overdue…..I miss the smell of spices in the streets, the slower pace of honoring life, and I miss the people. I very much miss the food too. Thanks for sharing. I have a few recipes given me by friends when I lived there. It brings a smile upon my face and in my heart when I watch your videos. Keep them coming.

    Been looking for a tonkotsu shoyu ramen recipe, and I love that yours can be done in one day! Some may say that sacrifices flavor, but if you say it's delicious and comparable to the Kyoto ramen you tried, I'll trust ya! So excited to try this

    I made this today and it was absolutely the broth recipe i was looking for. I didn't have Kumbo so I used benito flakes. I am going to try chicken next time. thank you so much for this recipe. The tare is the secret weapon. The combination was amazing.

    Visited Tokyo in 2016. We enjoyed the food and sight seeing trips. I love eating Ramen, sipping soups and Sushis too. Nice place, food, restaurants and warm people. Love to go back there again maybe in 2021 or 2022.

    Thank you. I made this. Used cheese cloth like you suggested and the neck meat went into some sweet bbq as well. Good stuff and nothing like packaged ramen. Amazing stuff. The broth is awesome if you put it into cubes for when you need it.

    I only had two problems with this recipe: 1: I don’t have any big pots so I couldn’t make as much. 2: I wore a white shirt. Oh and Jacob is right. It is between 80-90 degrees here and I still love this ramen!

    I made this and just ate it and it was so so so so so good! 美味しい! I’ve never attempted anything like this before and am so glad I did, i made the broth a day in advance and it made for a easy dinner tonight... just cook the ramen noodles, tare and some simple garnishes. I also poached an egg for 4 minutes which went perfectly with this!
