Today I’m going to be sharing with you how to make the best pozole rojo in an instant pot! Let me tell you this recipe is seriously super easy and it takes less than one hour to enjoy a hot bowl of pozole! For those who like to judge based on the tools I use, let me tell you if my grandma had an Instant pot back in the day, I guarantee you she would use it too!!!! Either way if you are one of those, I already have a recipe on the original way 😉 so don’t panic!!! But if you are busy and want it fast then here you go this recipe is for you!!! Now let me tell you, it’s easier to throw in the meat without searing but me personally I find it doing it that way, the meat has no flavor it’s just different! I like to take the extra minutes and sear my meat! A good pozole has to be full of flavor!

Tip: if your Chile pods are normal size( use only 12 mine were on the small size, lately my favorite brand are coming small so I used 15
** I love to use New Mexico Chile pods they are medium heat for me is perfect but if you want your pozole to have no spice, use guajillo 😉
Ingredients: I’m using a 8qt instant pot makes 8-10 servings
2-3 lbs pork shoulder
2 lbs pork country style ribs
3 - 25 oz each cans precooked hominy
12-15 New Mexico or guajillo Chile pods
2 Chile ancho or pasilla
Chile árbol (optional)
1/4 white onion
4 garlic cloves
1 tbsp chicken bouillon
1 tbsp oregano
1 tsp whole cumin
1 tsp whole black pepper
2-3 tbsp coarse salt
1 tbsp black pepper
8 cups water
1 serving of love 💕

I made this today! Wow! My Mexican husband said “it’s amazing”! I followed exactly. I added 2 tsp of salt to the broth (no chicken bouillon) and skipped bay leaf because I didn’t have any. Amazing ❤

I’m Indian and I love pozole! My neighbors are amazing about giving me a lot when they make it but I do want to learn and all the videos I’ve seen just show 2-3 hours of kitchen time… and you cut that down to a hour or so ?! Beyond grateful for this video I cannot wait to try it !! I need to add a instant pot to my Xmas list now 😂

Another delicious success with your recipes! I did tweak it a bit as I only needed 5-6 servings. I used the instant pot pozole rojo and the chicken pozole recipe to come up with" instant pot chicken pozole" and a smaller batch. It was wonderful. I had gotten into a sad habit of using canned enchilada sauce for my pozole for a quick version while working. Truly, it doesn't take that long to prepare the chilies for a much earthier and richer sauce! Can't wait for leftovers tonight!

Claudia, thank you so much for these recipes in the instant pot! My husband gifted me a instant pot and I've been having lots of fun using it and trying out making these recipes. I know how to make pozole on the stove as my abuelita and mom taught me that way, but it sure takes much longer lol. I'm sure if my abuelita had an instant pot back in the day she would have had a ball with it and she would have loved how it takes less time to make these delicious recipes using one 😋😊😘 I have a question though in regards to the meat, I know you mentioned it at the end, but if you choose to not cut up the meat into small little pieces and want to put in the meat whole or in larger pieces how much longer then would I have to leave the meat cooking in the instant pot please? 🙏 I know that when you cut the meat in smaller pieces it lessens the cooking time so therefor you leave it on for less time. My family just likes the meat in larger pieces 😊 thank you once again for your recipes!! 🙏💞

I made this with my daughter and it turned out amazing! Good thing you said to strain the salsa because I would have just put the whole thing in as is😂
I have been in charge of the posole (My family is New Mexican I know I know. we spell it “wrong”😝) since college. I always make both red and green and I like it spicy too. It is my firm belief that the acid from the chiles will kill all the winter cold bugs. No faster way to clear out a stuffy nose!
