Here's a simple and fantastic Chinese recipe for preparing okra. If you've been hesitant to try okra due to its slimy texture, this recipe is for you because the egg protein absorbs most of the slime and balances the texture in a perfect way. You will be surprised by the result: fresh, crispy okra, soft, tender egg, and no more sticky strings pulling in between the pods.This is probably the best way to enjoy okra.
Ingredients
170g / 6 oz okra
1 tbsp cooking oil to blanch the okra
3 large size eggs
1 Tbsp soy sauce (Amazon Link - geni.us/light-soy-sauce)
1 Tbsp oyster sauce (Amazon Link - geni.us/premium-oyster-sauce)
1/2 Tbsp garlic chili sauce
1/4 tsp ground white pepper (Amazon Link - geni.us/white-peppercorns)
2.5 Tbsps cooking oil
Instructions
Bring a pot of water to a boil, add oil and okra, and blanch for 1.5 minutes. The oil will coat the surface of the okra and retain its vivid green color.
Take the okra out of the pot and rinse under running water to cool completely so your hands can handle it.
Discard the calyx, where the part that connects the stem. Then cut the okra into 1/4 inch thick slices. Okra is also known as lady’s finger or gumbo, its slime liquid is made up of a soluble fiber, which is nutritious and good for you. Place the okra into a bowl. Crack in 3 eggs and add 1 tbsp of soy sauce, 1 tbsp of oyster sauce, 1/4 tsp of ground white pepper, and 1/2 tbsp of your favorite chili sauce to give the dish a little spicy kick (any brand will work). Mix well
Turn the heat to high and heat the wok until smoking hot. Add 2.5 Tbsps of oil and swirl it around to form a non-stick layer at the bottom.
Add the okra and egg mixture and wait for 10 seconds. Then gently swirl the wok around to make sure the bottom of the egg is not sticking to the metal.
Once the egg is set, use you spatula to flip to pan fry the other side. Chinese people prefer our eggs to be brown and crispy, which may be a bit over cooked in western cuisines. However, you can cook to your favorite doneness. Keep stirring and break the egg into smaller pieces.
You can serve it as a side dish. I like to eat it as a condiment alongside plain congee.

Nigerians eat Okra boiled and salted, mucilage and all; from childhood, it's an amazing vegetable, a superfood. Of course if you didn't grow up with it, you might not like the slime. Very cool recipe, I might try this.

Yeah I even enjoy the slimy feel and can’t remember ever hating it, though I’m sure to get some looks if I try frying it with eggs in my Nigerian home but I cook unusual stuff all the time so might as well.

I grew up with it. I didn’t like it then, and don’t like it now. Except cornmeal fried okra, but even with that, I can only eat a couple pieces.

The okra becames slimy of the inside enters in contact with water. So if you dry them properly before cutting they will not became slimy. You can also prepare them sauteed with a bit of oil. Fry them until golden brown them season. They will be perfect and not slimy.
Okra being slimy is what I like about it!

In the south we love our fried okra, but this is a different take on Okra and I’m looking forward to trying.

YES, YES, Yes! I just checked your videos, and there were no any videos of okra, so please, please, please do post more okra recipes. I cook okra Indian style so I need more Chinese way cooking this fabulous veg. LOVE your recipes and cook them often.
I am Cajun. I grow it in my garden. We smother it with a bit of onion and tomato. I freeze that for future gumbos. I like it boiled and dipped in vinegar, fried with cornmeal and flour mixture, I can (pressure can) okra tomato,onion, and corn together. I would love to see more of your okra recipes.

I canned some okra with tomatoes and sausage one year, and didn’t leave enough headspace in the jar, all ruined a few days later.

Yum! I have some frozen okra left. I hope this works with frozen. I would love to see popcorn okra and steamed egg with okra, maybe an okra quiche. All with a Chinese twist. Mat or tofu stuffed okra? or okra boats? Yum YUM!! 😃 I keep trying to grow okra up here in Canada. It works but I have to start them indoors pretty early to give them a chance. It is hot enough in the summer and I always grow enough to be able to save some seeds for the next season.
I looooooove okra - stir fry, deep fried (cajun style), in gumbo and in soups like Vietnamese canh chua (a sour catfish soup). I don't mind the slimy texture because I grew up with it. I think it's because of the caviar-like pop of the seeds inside. I would definitely love to see more recipes with this vegetable since I love it so much.
I'm one of those people who likes the sliminess of okra. I've had this before also, and I also like it!

What a wonderful way to cook okra! I love okra, but I usually just steam it alone or on top of a rice dish of some sort, or cook it with tomatoes. I'm definitely going to try it this way. And yes, I'd love to see more okra recipes.

The balkan people bakes it more times in the week with onions, tomatoes, Paprika, eggplants, garlic and our spicy, persil, oregano and pepper and with olive oil. It's number 1 for the diabetics. Interesting way to make okra. Americans in the south like 'em breaded and fried. I love them in gumbo and such. The slime doesn't bother me at all.

I sure will try this one for variety. One way to take away the slime is washing and drying it with paper towel, cut as in this recipe, heat the frying pan or wok like this recipe, than add the sliced okra, go adding some drops of vinegar and mixing, do this again adding vinegar and mixing until you notice that there is none or almost nome slime at the bottom of the pan/wok (Go little by little with the vinegar not to overpower the okra). When like this you can add garlic, salt, and any spices you enjoy, even cherry tomatoes halved or tomatoes shopped. Serve it as soon as possible. Enjoy!

I havent tried okra, I will have to keep an eye out for it. When I cook scrambled eggs I add a little ketchup just to thinly coat the bits and it adds a lovely umami then i add a dash of soy sauce and spring onions
