This is one of my favorite video of yours. i dont know why, but i keep going back to this video over and over again
David is completely right, searing meat doesn't actually "lock in" juices, but the glycogen in the meat is caramelized and it is the flavor that is sought after. In French cooking, bits left stuck on the bottom of the pan after browning meat are often deglazed with wine and/or butter to make the sauce. The "essence" of the meat is integral to any true pan sauce.

No, she has liked plenty of other dishes and food before. It's just the whole video/hype thing saying "I dont like food" "omg, this is the only food i like", go through the vlogs/jkfilms and so on and she's had plenty of food that tasted "BOMB". These videos seem more promotional for the restaurants/chefs than anything else tbf. No criticism, only talk about the good thing and everything is "the best". Anyway, not hating but it'd be more fun / interesting to see David try to make these meal and serve them.

And actually searing makes meat release more juices than not searing. Multiple experiments have been done checking weight of the steak seared vs unseared and unseared always ended up heavier and therefore with more moisture content.

Even the 'family friendly' topics like reviewing food places are thoroughly filled with 'vulgarity'. Which I personally love. But I wonder if they mostly get ticked as un-monetize-able or if they're left alone.

This myth needs to die. Searing does not seal in the juices. In fact, experiments show that seared meat loses more juices than unseared meat. David has it right about the crust. That crust gives off a lot of flavor and a texture that we enjoy. It's why Sous Vide and Reverse steaks are considered better than just traditional straight up searing. Searing it after the meat has gotten to temperature results in a more uniform cook through the meat rather than the crust, band of grey overcooked beef, and then the pink/red that we like.

Flipping it more than once is also completely fine. A lot of chefs (despite being great at their job) know very little of the actual chemistry going on and tend to just believe in tradition and hearsay passed down. It's true in many professions and cultures though. Not calling chefs out singularly, just saying that people need to actually look up their stuff.

I meant about searing the meat. it doesn't lock anything in. You want that browning for flavor, it seals nothing in. The Maillard Reaction. That's why you're supposed to rest meat after you cook it - to let the juice stop boiling and redistribute. No amount of searing will hold juice in. en.wikipedia.org/wiki/Maillard_reaction

Look at recent food related illness outbreaks in the US. You're FAR, FAR more likely to get sick from eating a salad than from eating medium-rare cuts of meat.
