The BEST Focaccia I have EVER Made

Focaccia Recipe
80% hydration
1.3% sugar
2.3% salt
1% instant yeast
12% olive oil
20% levain
I like using a 1:1 poolish left out overnight for some extra flavor, but you can mix together and let it proof in the fridge overnight for some still great results
Mixed in some sweet potato, maple, miso puree & topped with hazelnut praline.
