This simple drink from Trader Vic has turned into one of my favorites. It's a great way to highlight any of the Rhum Barbancourts. It's named after Comso Place, and alleyway in San Francisco where Trader Vic's San Francisco opened in 1951. According to Vic, most of his guests in Oakland were traveling from San Francisco so it made sense to open a location there.

    Apparently, Vic REALLY liked the word Cosmo. Besides the drink, the Trader Vic's Tiki Party book also includes recipes for Cosmo Salad, Cosmo Dressing (for the salad), and Cosmo Tidbits (a platter featuring Cha Siu Pork, BBQ spare ribs, crab rangoon, and crispy prawns). Now I'm hungry.

    Just discovered that Beachbum Berry doesn’t have this cocktail in his Total Tiki app. No wonder I have not seen this before.

    The Total Tiki app is not an encompassing Tiki recipe app. It's curated and there are even recipes from the BB books that are not on the app. There are hundreds and hundreds of TV recipes that are really nowhere to be found outside of his books. Most are unremarkable, but there are some gems as well.

    I was just at a rum tasting and was able to try Rhum Barbancourt 4 star and and 15 year (I think) and I remember the 4 star being one of my favorites from that tasting. Next time I'm shopping I'm definitely going to pick up a bottle and try this drink. Thanks!

    The beauty of Rum cocktails is the way you can mix up the flavors by just picking a different style of rum. I've played with pineapple daiquiris before by acid adjusting pineapple juice. Usually mixing in either a white Jamaican Rum or lighter blended one. Hadn't really thought to try it with a fresh cane juice Rum before. Now I need to pick up a bottle of Rhum Barbancourt.

    This looks like a winner. To me, Barbancout is less "grassy" than a traditional agricole rhum.

    This is almost the exact recipe I've been using to make my "pineapple daiquiri" except using an additional .5 oz of rum(Probitas) and serving it up in a coupè. Will try with Rhum!

    Was sitting there thinking "Huh reminds me of a Port Au Prince" right as you started talking about it being similar to many other drinks as all cocktails are. Great point! Definitely going to give this one a try this weekend.

    Thanks for another "have to try this one" recipe. Barbancourt 3 is one of my favorite rums. I understand Barbancourt is discontinuing this offering,, changing over to a 55% version they are calling "Haitian Proof". I'm hoping this new offering will be amenable to dilution down to the traditional Barbancourt 3 proof without noticeable changes.

    Haitian Proof is a great bottle! Highly recommended. But I don’t think it’s replacing the 3-star?

    The 110 is replacing the white, which was 86 proof. As far as I know, same exact Rhum just higher proof. I have a short on comparing the two that you can watch.

    I've read a lot that aged Barbancourts are much more like traditional molasses aged rums than sugar cane ones. If I don't have access to the Barbancourt rum, is it better to use some Bajan rum? Or it's still better to use something cane juice-based like aged Martinique rums?

    They’re not going to be like aged Martinique rums. Really its own thing and I couldn’t tell you if it’s better to use another molasses rum, or something else like cachaca or even a cognac. The 15 year taste very, very similar to cognac They use a heavy amount of French oak, so it has a distinct flavor. Not super helpful, but I don’t think there’s a good 1:1 sub.

    @@makeanddrink You VERY helpful, as always! Well, I was talking about younger versions, like 3 Stars you were using here. I assume it's far less French barrel-like than older versions. According to your description, it almost seems that classic aged rum with addition of boise, they use for Cognac production, would be a good substitution. Thanks a lot anyway!

    Friend, I just looked it up. It said barbencourt rum is distilled one time and is unaged.

    Age statements are literally on the bottle. There are 4 different Barbancourts.
