Chilli Chicken is a family fave every time we go out for Hakka Chinese Food. The combination of fiery green chilli, dark soy, and sweet onions is so delicious.
I've cracked the code on this dish, and in this video I'll show you how to bring restaurant quality Chilli Chicken home with this super simple recipe. Once you start making it, you won't be able to stop :D
I hope you enjoy this video :)

RECIPE
INGREDIENTS
To prepare the chicken
1 lb boneless skinless chicken thighs, cut into bite sized pieces
1/2 tbsp, grated fresh Ginger
1/2 tbsp, grated fresh Garlic
1 tsp, Black Pepper
1 tsp, Salt
1 tbsp, Soy Sauce
1 tbsp, Chinese Cooking Wine
4 tbsp, Corn Starch
Canola/Vegetable Oil for deep frying
For the sauce
2 tbsp Water
1 tbsp, Corn Starch
1/2 cup, Chicken Broth
3 tbsp, Dark Soy Sauce
1 tbsp, Rice Wine Vinegar
1/2 tbsp, White Sugar
Salt to taste
For the vegetables
2 tbsp, Canola/Vegetable Oil
1 medium Onion, sliced
1 tbsp, finely chopped Garlic
1/2 tbsp, grated fresh Ginger
4 Green Chillis, sliced
Sliced green onions to garnish
METHOD
Pour oil into a deep pan, and preheat to 350 degrees.
In a bowl mix together all ingredients for chicken. When oil is ready, add chicken one chunk at a time ensuring not to crowd the oil. Cook in batches for 4-5/minutes per batch or until chicken is crispy and cooked through the centre. Drain on paper towel and set aside.
In a bowl, whisk together water and corn starch. Once dissolved, slowly whisk in chicken broth, soy sauce, vinegar, sugar, and salt to taste. Set aside.
In a large frying pan heat oil on medium high heat. Add garlic, ginger, and chillis, and saute for an additional 15-20 seconds or until all ingredients are fragrant. Then add onion and sauté for 45-60 seconds or until just glossy, but still crisp. Remove from pan and set aside.
Whisk sauce ingredients once more to ensure the corn starch hasn't settled at the bottom, and pour into pan. Allow to come to a full simmer, stirring consistently until thickened and glossy. Add fried onions and chicken and toss to coat.
Garnish with sliced fresh green chillis, and serve alongside hot rice. Enjoy! :)

Literally searched up recipes for chilli chicken, looked for one that looked the most like federicks chilli chicken which brought me to your video and then you started talking about federicks and I instantly knew I picked the right video.
I have tried SO many chilli chicken recipes and it never tasted like the one you get at a Hakkah restaurant. But this is IT! THANK YOU
I screamed out of glee when you mentioned Fredricks! I came back home to Indonesia after university, it has been 5 years since then and boy I miss this hakka dish so much! (there isn't one like it out here) Thank you for sharing this recipe! Definitely going to be a permanent addition to my at home meals. Love you!
Grew up in Scarborough, a lot of family dinner memories at Fredrick”s. Great Recipe!Thank You.
Oh my God turned out amazing and sooo close to exactly like Federicks! Thank you! Anyone missing hakka food who moved away from the GTA needs to make this immediately. Probably using a little MSG instead of salt would make it even more identical to restaurant version.
I can’t wait to make this! I love Federiks!
Can't wait to try it. I miss Scarborough food.
Hi there, i was SUPER skeptical about this recipe because of how simple the ingredients were. I used regular rice vinegar instead of rice wine vinegar. Still tasted AMAZING. Thank you for this. Tastes exactly like all the hakka places. Thank you thank you thank you
Good old Fredricks! Trying this recipe tonight. Can't wait!
I was legit googling how to make FREDERICKS chilli chicken.... so THANK YOU for this video so much ☺️☺️
Can’t wait to try this one!!
Can't wait to try! 😊😊😊😊

Jus found your channel. Omg love all the receipes. I like your videos ..straight to the point and all those receipe u have below your videos .thank you woman !❤
Thank you very much! Got my Frederick's fix during quarantine!!!
I made it! Yes it was super great and 5 impartial foodies agreed! I toned the spice down a little and used serano peppers and cooked it with two green Thai peppers but whole and not cut up. I also added a teaspoon of sambal into the chicken Marinade. It was very high caliber. Don't know if it could get any better.
Thank you for this amazing recipe!
Dang, you make me hungry!! Your recipes look so freaking good!
This is my go to recipe. Just pan fried chicken without the sauce, already so good. Must try recipe!
This recipe was amazing, I just tried it. You're bang on, thanks for sharing!!!
Was so good to hear you mention Fredricks :) and this looks amazing.. but I have to say, we live in london ontario.. far from any hakka selection.. so we had to hunt and make this recipe ourselves few years back.. and what we discovered was.. remember how their sauce almost looked black in colour ? the differences being..try to not add sugar.. and add cumin in the marinade stage. it gives it a depth without tasting like a curry, and the sweetness of the fried onions comes through. We still order hakka from Lin garden aswell :) awesome.. keep em coming love your channel and recipes
OMG! Looks delicious!
Looks Awesome.
I’ve been looking for a good recipe so badly! in English 😅 thank you! Can’t wait to try
Thank you very much I first was a little concerned and then you mention Fedrick’s after I heard that I felt like I was in great hands. Can’t wait to make this myself I will definitely reach out and tell you how it went
Amazing recipe, thank you! Very similar to Frederick's. For those who don't have access to rice wine, I substituted with white vinegar and it turned out delicious.
I just made this tonight and it was sooooo good! The only mistake I made was using a ghost pepper!! Whew was it hot! I knew it would be too hot as soon as I started cooking the garlic/ginger/chili/onion mix and couldn't breath cuz my lungs were on fire from just breathing the steam from the ghost pepper lmao. So I doubled the sauce ingredients and added extra sugar, so I did tweak it a bit to make up for the heat level. But it had a really great balance of flavors and I couldn't stop eating it! Next time I will def use a different chili or half of a ghost pepper! Thanks for another great recipe Vijaya!!
Thanks for sharing.
OMG we went there with our kids. Great memories!
I made this and it was aaaaammmmaaaazing
I cannot wait to try this! I absolutely LOVE the way you show us what everything should look like before each step. Thank you, thank you, thank you!

It would be nice if she had the measurements in the video. This way you don't have to copy it down or refer back to where she posted it in the description. I also think the measurements are off. She has way more ingredients than what's in the recipe.
THIS MADE MY LIFE!!! I literally go from the airport straight to federicks. Grew up in scarborough, thank you for making this video!! Reminds me of home
I was looking for dry version of this, thank you
This recipe is soooo great! Thank you for sharing this 😊 I’m wondering if it’s possible to cook the chicken in an air fryer instead of deep frying?
Federick's is the bomb!
Man you made my day I been looking for this to do it my self for ages lol great work
Thank you I made this and it was amazing your videos are always a delight
wow girl this is the best
I just moved to Scarborough last year July. I will definitely try Fericks and your receipe. Thanks V!

Federick's! Their chilli chicken is legendary. They are still open during the lockdown. Pick-up only, of course. Call ahead.
Omggg! I’m so happy I came upon your channel! I’m from Scarborough too, and I’m craving Chili Chicken from Federick’s!!! So you know EXACTLY the result I’m looking for! I hope your recipe is very similar!
I use to live across the road from Fredrick's, grew up eating this most my life
I want to try this
Wonderful thank you! Great presenting style too;-)
This chicken is off the hook, girl! My go to now👍
Hi Vijaya, I made this chilli chicken this evening. Very nice. Thanks.
When growing up in Mumbai, I used to eat occasionally at a place called Federick in Byculla. When I later moved to Canada, one fine day while driving around Scarborough, I noticed a restaurant on Ellesmere called Federick. What intrigued me was the fact that the name was spelled the same way as the restaurant in Mumbai (Federick not Frederick). So I decided to try it. I told the waiter about the restaurant in Mumbai with the same name and spelling. To my surprise, he said it was a branch of that same restaurant. WOW! Have since enjoyed many a chilli chicken there whenever we visit Toronto. Thanks for the recipe. Turned out really tasty (I used 3 times the amount of Thai chillies lol).
YES! Fredricks is a Scarborough/Markham classic. Chili chicken is the best!
Yes!!!! Federicks!! You should have seen everyone’s eyes open when you said federicks. It’s been the family go to place from childhood until now. Just had it yesterday. Grew up by the scab location and now near their Markham one.
The best chili chicken is at China Garden on Airport Rd. Its in the maxtel plaza in Rexdale. I've been trying for years to figure out their recipe without success. Yours is not it either but closest ive come to the real thing. Simple instructions and easy to follow. Good job!!
Cooking style of chilli chiken really easy , simple and tasty. Thank you very much for sharing the recipe.
Hi Vijaya you are probably the girl that pushed me out of the way when I was trying to get into Fredrick’s long ago!! LOL I ate at Fredrick’s yesterday, in Scarborough, had some Chicken Pakora you didn’t mention them!! I will be cooking this chilli chicken, your way. Looks so good!! I guess yesterday will be the last day I eat at Fredrick’s.
I am watching from Calgary. You are Amazing cook 👌
Thanks for making this, i miss Scarborough already, left Canada almost 6years ago!
Luv your presentation- spicy and funny.
Delicious❤
I loved it! The only tip I would give is to not use *dark* soy sauce (I used Pearl River Bridge) as it turns everything SUPER dark and salty. Regular soy sauce (Silver Swan for instance) gives you the result in the video. Anyway, I was so nostalgic for this dish from my time in Canada :)
We got fredricks on Dundas in Mississauga. Same owner from Scarborough. Sizzling plate with chilli chicken, chicken corn soup, shrimp fried rice. SIMPLE BUT SO GOOD
wow so yummy
This is just too delicious thanks for sharing your recipe. All the way from Zimbabwe....
Great recipe! I just made it. I like using Sambal Oelek in my chili chicken but I found a great chili oil recipe ( Chiu Chow ) from "My Name is Andong". It made it perfect!
This recipe works with the air fryer too!
Hi thank you for sharing such great recipe! So I want to say as well, I've make the tandoori chicken that you have shared from your previous blog and I tell you what...... it's amazing. So thank you so much with that as well!
Ayyyeeeeeee Fredricks represent!
I just made this and it’s absolutely delicious. Thanks for sharing!

Sheppard and pharmacy.Who knew I will end up living 15 years in China till now . Thank you for video I am going to cook it today ... hopefully this corona is done so I can come back home ...
I've been to Frederick's a few times. I really enjoyed the chicken pakora as well. I really enjoyed this chili chicken recipe. I will be using this as a reference to when I make it on my own. Thank you.
tried it .... a m a z i n g
Ate Federick’s ALL the time when I worked in Scarborough. Now I live in Oshawa, and would love to replicate the chili chicken recipe. I enjoyed your video, and will be following your instructions. Their pakora was so good too. Wish me luck, and thank you for the instructions. ❤😊
I just made this following your recipe and it turned out amazing! Federicks/Tangerine chilli chicken is probably my favourite dish however I’ve always had a little issue with the batter to chicken ratio you end up getting. That’s not an issue anymore now that I have this recipe! I’m a new cook so this was my first time deep frying anything! Can’t wait to try making some of the other dishes on your channel - Thank You!!!

1:10!! Haha.. we love you anyways!! Thank you for the recipies!!! :)
Hi V, I live in Quebec and when ever I go to toronto I go frederick s
This looks yum. Just a little advice is to leave the onion to stir fry a little longer enough to go a little transparent and a little brown on edge.
Scarborough!!
Hey sis....thiss jeni ...i have try this recipe it came out very good thank you so much
Can I skip out on the Chinese cooking wine ? & Instead rice wine vinegar for the sauce can I substitute with red wine vinegar ? Please let me know 💕💕💕💕
Hi Vijaya! I’m trying this recipe out for my fiancé and since he doesn’t want the chicken fried, can I bake the chicken bites instead? I’m a newbie when it comes to cooking meats (I’m vegetarian) and wanted to know more info! Thank you!

Tried it, turned out amazing! You ever tried China cottage? It's rebranded now (Pharmacy/Ellesmere) but it's really good! 🙏 thanks
Thank you Vijaya, the recipe was wonderful, I did do some substitutions though cause I didn't have some of the ingredients 😊 First I had chicken breasts only so used them then for the Chinese white cooking wine, google said you can use Japanese sake cooking wine called Mirin and I did not have the rice wine vinegar, subbed lemon juice and finally, I didn't have the guts 😊 to by chiles so I used Iron Chef brand Sweet Chili Sauce!! To me everything came out fantastic!!! Gracias!!!
Hi can I use corn flour instead of cornstarch.
