Today I’m going to be sharing with you how I make the most delicious tamales Oaxaqueños (mole tamales) let me tell you this are seriously super moist, delicious and just simply delicious! The traditional way is using banana leaves, this keeps the masa super moist and just gives it a little kick of extra flavor, but of course if you can’t find them feel free to use regular corn husks! If you are in Arizona you will always find the banana leaves at your local food city in the produce section. Tip ‼️⚠️ if you don’t like your mole to be too sweet use New Mexico Chile pods(red bag) or use guajillo and add some Chile de árbol 😊 if you don’t have a mixer no problem!You can use a wooden spoon or your hands to mix just be ready to mix for over 45 minutes 😅
I M P O R T A N T ⚠️
For the masa make sure your broth is hot! And also make sure you are mixing on high speed for 15 minutes you will know your masa is good to go when you add a little piece of masa to a cup with water, and the masa floats , that means your masa is light, which means is PERFECT. Light masa means it has hydrated enough and has enough fat! A little confusing but this is very important, tamales are time consuming so you have to make sure your masa is NOT dry!
Ingredients:
4-5 lbs chicken breast with rib(boil 4L of water with 1/2 onion, 1/2 head of garlic, 2 bay leaves and coarse salt)
For the mole sauce
1 inch cinnamon stick
2 bay leaves
4 all spice berries
3 whole cloves
1/4 tsp cumin seedS
1/2 tsp whole black pepper
1/2 tsp thyme
2/2 tsp oregano
1/2 plantini
1 roma tomato
1 tomatillo
1/2 onion
4 garlic cloves
8 New Mexico or guajillo Chile pods
2 Chile pasilla/ancho
1 Mexican chocolate disk
15 unsalted crackers
1 tbsp unsalted peanuts
1 tbsp sliced almonds
1 tbsp pumpkin seeds
1 tbsp sesame seeds
6-7 cups chicken broth
1/2 cup brown sugar or to taste
For the tamal masa:
Banana leaves
6 cups instant corn masa for tamales (Maseca brown bag)
6 cups chicken broth
1 1/2 cup lard
5 tsp baking powder
1 serving of love 💕

The history of mole is fascinating. Love tamales de mole. My grandma would add an olive in the stuffing. As far as the history, a bishop stopped one day unannounced, the Padre asked his cook to make something. Well she was mad and started adding what she had at hand and mixed it up and the bishop loved it and mole was born.

Awesome recipe.. ive never heard of chicken mole tamales, but pretty much can be add to a tamale recipe. My wife was never had mole, but she does like chicken tamales. She doesn't like the hot spicy food, i use to be able eat it.. but I get very bad acid reflux. Thank you for the recipe 😊

Hi ,thanks for sharing,never heard of mole tamales but it looks delicious 😋,here in Belize we use the same banana leaf or plantin leaf for our tamales.
I made your other tamales by myself. It is A LOT of work. If someone personally makes you a tamale, it is an expression of love.

@@CookingConClaudia Yes most definitely bay leaves are a lot easier to find. Here where I live we planted the Hoja Santa and it grows like crazy, but before that I would get a lot of Hojas from my suegros house and freeze it. It stays great in a Ziploc for about 6 months or more.

Ohhh yessss you can!!!!! This mole recipe is more for tamales but feel free to use either one! I would love to know how it go once you try it out 😀☺️

Hello beautiful! I get my banana leaves at food city they are normally next to the lettuce and leafs 😊 wrapped in a blue/green bag and wash them and dry them because they are dirty 😀
