RECIPE
▼材料 Ingredients
牛油 Butter 60g
糖粉 Icing sugar 30g
蛋黃 Egg yolk 1
淡忌廉 Whipping Cream 10g
低筋麵粉 Cake flour 80g
杏仁粉 Almond Flour 10g
▼步驟 Instructions
1. 室溫牛油加入糖粉,打至淺白色
2. 分次加入室溫蛋黃、淡忌廉,打至混合
3. 分2次篩入麵粉、杏仁粉,攪拌至無粉粒,加入擠花袋
4. 擠出の形後,焗150°C 25分鐘

餅乾紋路塌陷程度,應該與麵粉蛋白質筋性、奶油室溫軟化程度有關
我試了食譜,發覺效果有點硬,後來從食譜中拿走蛋黃,曲奇便變得很鬆脆

People irritate me when they want to change the recipe, This is the recipe, no substitutes, do not fuck up the recipe!
Recipe doesn't turn out good. Flour scale way too high compare to egg/ cream and butter. Sigh disappointed
