And about the spices, when I lived in Canada, I learned that Columbus was actually NOT looking for India when he found America, but looking for Indonesia (called East INDIES at that time) instead. Spices like cloves, nutmeg and mace (some people even say pepper) in that era could ONLY be found in Maluku (Molucca) islands. I'm an Indonesian living in Indonesia, and I can vouch for this video. It's quite correct, though I must add that we have many other must-have dishes... I've been to North America, and seen and heard a lot of comments praising Indonesian food (after they tried it). And do you know that a European musician made a song about our dish ('nasi padang' to be precise), and sang in the lyrics "If you were a girl, I'd marry you..."? It's that good...😊 About the lemper, I tried making it when I was in Canada. And my first time lemper got so many positive comments, one friend actually asked me for the recipe and tried making it too...! And martabak was one of the dishes I greatly missed while living abroad...😅

He missed Soto. Before Sop Buntut or oxtail soup you definitely must try Soto. It's the legit Indonesian stock-based dish. There are many versions of it depend on which area you are at. A note, you must go explore accompanied by local Indonesian to get the most authentic dish, if you really want to experience the real taste and not the restaurant version. Be prepared for the Sambal. I think he was pretty accurate in his descriptions Ellis though I might have changed a couple of dishes. U am not really a sticky rice fan though. There are many "soto" soup varieties Soto ayam, soto betawi and many more. One unique dish is rawon a black soup but you might find it too salty but the taste is very delicious. Of course whatever you are eating you can always ask for chili sauce or sambal. I really hope that you can make it to Indonesia as you have supported a lot of Indonesian talent I am sure a lot of your subscribers would also be excited aabout that!

Also very popular Street food and comfort food for many Indonesians. Then soto, another clear soup with chicken or beef. Lemper filled with fish is actually rare but most commonly found is filled with shredded beef and chicken meat. In the West Java province there is something similar to lemper, but not lemper but buras, the contents are fermented peanuts and then wrapped in plain rice and wrapped in leaves.
