Thai Steamed Fish With Lime and Garlic Recipe (ปลากะพงนึ่งมะนาว)

In this Thai recipe video I had the pleasure of hanging out with Pai from Hot Thai Kitchen - she’s a chef, a food lover, and she also makes awesome videos on KZread - especially Thai recipes. We decided to cook one of both of our favorite Thai seafood dishes, in Thai called pla kapong neung manao (ปลากะพงนึ่งมะนาว), and in English a steamed barramundi fish (also called Asian sea bass), with lime sauce, garlic, and chilies. It’s actually quite easy to make this, it just takes a fresh fish and a few other common ingredients. It’s simple and delicious.
Join us in the Bangkok street food kitchen for an amazing recipe, and a dish that’s sure to be a stunner! Here are the ingredients you’ll need:
1 whole barramundi, about 1 - 2 kilos (or whatever size you can get) - you could also use a smaller fish if you’d like, or a different kind of fish
5 stalks of lemongrass
1 cup chicken stock or fish stock for the sauce
2 Tbsp finely chopped palm sugar
8 Tbsp lime juice
6 Tbsp fish sauce
2 head garlic, chopped
Thai chilies, to taste, finely chopped
20 - 25 sprigs cilantro, chopped
1- 2 stalks Chinese celery, cut into 1-inch pieces

But really, all you have to do is steam the fish, mix the sauce ingredients all together, and then combine the plain steamed fish with the lime and chili garlic sauce, and you’ve got pla kapong neung manao (ปลากะพงนึ่งมะนาว).

Did this yesterday and my family finished the whole fish (even the head! ) Soaked the fish in tamarind juice and salt for 10 - 15 minutes just to get rid of the fishy flavor. Then remove the juice, clean the fish again with water and put it in the strainer for awhile. Then just follow the recipe given in this video. Perfect! Thanks Mark and Pai ♥️
Another thing I love about Pai is that she explains what the names of the dishes mean, word by word.

well...Pla means fish...Kapong means barramundi...neung means lemon...( perhaps)and manao means steamed...

Mark and Pai, I made this dish tonight for my family's Chinese New Year reunion dinner and it turned out beautifully! The sauce is so delish and hits all the right notes in my taste buds. Thank you so much and hope to try more of your recipes! If I could post a picture of my fish here, I would :) I used a mid sized Branzino and steamed for ten minutes.

I've been wanting to make this dish and searched all over various markets looking for barramundi. They were either processed and sold in pieces or none at all. Was about to give up when lo and behold my husband spotted whole barramundi at our 99 Ranch market. We snatched the that bad boy and recreated this dish... Now my husband hates fish sauce but I added it in the sauce despite the look he gave me. Yeah I'm evil that way.. 😈. I served it piping hot and he took one bite and now wants to buy a fish pan just to make this again in the future. This is by far the tastiest fish dish I've made. Thanks Mark and Pai! 👍👍👍

I made it today!!!! Exactly followed the whole recipe.. the outcome of the cooking is out of the world!!! So delicious and so Soooo healthy !!! I was beyond excited about the whole cooking process and I can't tell you how I enjoyed the dish! Thank you so much for sharing such wonderful recipe! And also thank you the way both of you explained the whole thing. Haha!! I even checked the cooked fish the way you told in the video! My family thoroughly enjoyed the meal

The problem with fresh water fish is it smell more fishy especially if it is from farmfish. For preparation, I normally rub the salt and juicing the citrus on the fish. and let it sit after a few minutes before cleaning it again with water. In my opinion, it brings more satisfying result compared to other techniques. The fish will be less slimy and there is whitish fat is formed. but still I add lemon grass to steam the fish to cover the remaining fishy smell.

Fresh water fish not smell more fishy than salt water fish, but smell muddy.

We use Flour to wash fish as well it gets rid of the fresh smell you can wash any meat using flour it really works.

@@LalaMontenegro1 I use rice wine as it doesn't burn as much as vinegar, salt and lemon to clean all my meats and fish before seasoning. It also helps to get rid of any freezer smells and tastes and dirty ice:) I can not eat my food unless its cleaned that way. That is why i rarely eat out
