Language is something that keep evolving. If I use stuffs that we used in 2k, it'd cause so many problems nowadays.

Yes, If I used traditional Chinese characters and speak Chinese like ancient people hundreds of years ago, most people in China now could NOT understand me.
I've been told by Chinese coworkers that no one says 幸会,that's way too formal

Yes, 幸会 is a quite polite expression but we can actually use it when we meet someone for the first time especially on some important occasions like when your friend introduces you to his other friends in business or on other formal occasions. But it's OK if you say 很高兴认识你.
I've visited China and both versions were used.

Yes, it is OK to use both versions. The native speakers can understand you. 🥰
not "hi", but many Chinese say "hello" when they greet each other, I know I've lived in Chiina for 6 years now.

Exactly! We also say 哈喽 for hello.
They really use the English "Thank you"?

Many young Chinese start learning English as a second language in primary school. So 3Q or 三克油/sān kè yóu/ is a common but popular transliteration and abbreviation of "Thank you" in Chinese. It is an informal and casual way to express thanks in daily life. E.g. A: 你帮我拿一下杯子。 B: 好的,给! A: 3Q! Most Chinese people will understand you if you say thank you.
也要 不尔到 = 不知道 / 多尔钱= 多少钱

合音这种现象可到处皆是,跟用词无关。
