Texas Tornado Cake - Good Recipe For Those Who Work
This is a rich and very moist cake and can be made in one bowl without even using a mixer.
I used a can of Fruit Cocktail in heavy syrup, I would suggest using the Fruit cocktail packed in fruit juice instead.

This is mine from the Southern Living Cook Book.
Texas Tornado Cake
1 1/2 cups Sugar
2 Eggs
2 cups Fruit Cocktail, including liquid
2 teaspoons Baking Soda
2 cups All Purpose Flour
1/4 cup Brown Sugar
1 cup Chopped Nuts
Mix and cream together the first 5 ingredients.
Pour batter into a lightly greased and floured 13X9
Cake pan. Then mix the brown sugar and nuts together and sprinkle onto the top of the batter.
Bake in preheated 325 degree oven
approximately 40 minutes.
Spread Icing on cake while it’s hot.
Icing
1 stick Butter
3/4 cup Sugar
1/2 cup Evaporated Milk
1 cup Angle Flake Coconut
Boil the butter, sugar, and milk for two minutes ( it will raise up in the pan) add the Coconut.
Spoon over the cake as soon as it comes out of the oven.
Cool before serving.
Freezes well.

I want to do a cake for Thanksgiving; so, I am re-watching some of Miss Phyllis' videos. Gosh, I miss her. What a sweet soul; her videos were soothing and relaxing to watch. Rest in Peace Phyllis and Mr. Bucky.

I hope they leave her videos up forever I just love watching her cook in the kitchen and the recipes are really user-friendly so I'm sure it helps a lot of young women that are starting out with families that need to learn how to cook, wonderful wonderful woman her mannerisms and Her speech and the way she talks is so comforting and mild and relaxing just listening to her talk is very soothing, I'm so happy these videos are still here and I hope they continue for many years to come

My Grandmother used to make almost identical cake except she used brown sugar and butter in the batter and chocolate chips & chopped walnuts for the topping!! She called it a lunchbox cake :)

I agree 100% with the previous comment. All of her videos are a pleasure to watch. She and Mr. Bucky were quite a pair. It's comforting to think of her enjoying a good country kitchen in heaven. Thanks to her son for keeping the videos coming - a nice surprise when they pop up on KZread.

Miss Phyllis I just want to say thank you for your videos. My mother passed away 19 years ago at the age of 51. She cooked just like you and baked just like you. I never took the time when I was young and she was alive to learn to cook from her and I always regretted it. I was always too busy with my career. In the past year I have had to move back home to take care of my father and his second wife, because of their declining health. I found your you tube channel and by learning from you my father is in heaven eating like he used to when my mom was alive. His wife is enjoying it also. Thank you so much. You and Mr. Bucky have brought some comfort into our lives. Please keep up with the videos. I have also started them on the smoothies and it has helped alot.

I have been making this cake for over 30 years. It's always been called a "Fruit Cocktail Cake" in my family. It is my job to make it every Christmas when our family gets together & sometimes on a special occasion. It is so good. I always add a few pecan halves across the topping. I have used a hand mixer also. It doesn't tear the fruit up too bad. It's a hit in my family. Love all your videos!

Yup, fruit cocktail cake...i've been making this since the early 80's when a lady at church brought it for pot-luck. I use no topping though, just whipped cream. it sure is simple AND good!

My mom used to make Fruit Cocktail cake, too, when we had company. I always wished I had her recipe. Now I do, except I think Mom made some kind of thick syrup that you poured over each separate piece. Yummy!

Your sweet face holding up that delicious cake was on my home screen on youtube for days i would go to click it then draw my hand back because the heartache would start and i could not bear it...now hearing your sweet voice im in tears..dear friend you have no idea how or why people enter your life the crazy way you even came to know them and the many conversations and funny things that you shared with one another or in a thread...like having a hen party miles apart from one another but feeling like next door neighbors and just as protective of one another. I was so blessed to know you and you will always stay right here in my heart you are the southern charming most lovely and God fearing Christian lady ever...and your sweet thoughtful tutorials as well as the conversations and our friendship will be treasured. Your recipes are still our favorites here and I miss you. Tears falling on my tablet You would be proud of your son, he has done so much for us grieving while he himself walked through memories of you and Mr. Bucky and all the while still working and traveling. Vickie Lane me too. Fruit cocktail that you mix yourself is good. When you buy it in a can... It is awful. I saw this recipe and automatically thought peaches.

How did it come out with the peaches?
I thought I had a can of fruit cocktail but it was actually apricots. I also didn't have pecans but I found some walnuts in the freezer. The cake turned out awesome. Since I live in California in an area where apricots and walnuts are plentiful, I guess my cake was a California earthquake cake LOL. Thanks for the recipe, it was delish!

Hi Phyllis! Enjoy your video's! 🙋 My mom, would make chocolate frosting, that you would heat on the stove. It was made with cocoa powder. It turned out very shinny & looked terrific on a cake! I think she called it fudge frosting. Have you ever made this? Esther from N.Y.

We'd really like to know how Steely accomplished this too. I've only seen the stare down coming from Steely, every time he does it Sunny sits down no matter what he's doing which is usually something bad.
My friends mom made this in the 60s when I was growing up but she called it a Fruit Cocktail Cake. I remember it being delicious.I love that icing. We always use it on top of an oatmeal cake too.

I live in South Africa and when we make this cake which we call... fruit cocktail cake... We use the juice from the cocktail and use it to make the sauce with the coconut and we do not add the pecan nuts at all. It is a awesome cake and so moist. 💚👍

After my awful day .. I stumbled on this video I have watched several in the past .. I won't make the cake .. I just enjoy watching it and listening .. like all the other comments ... her voice is so soothing I was so hyped up after a long day and I have 3 14 month old puppies yes let's call them the 3 stooges!!! Your voice is literally like going for a massage so calming and soothing not at all like my personality 😂!!! I'm now ready to sleep no cake needed I feel like I've already had it!!! We have had this before, called either tornado or hurricane cake - I believe the name comes from after a storm roads or stores may be closed and it's made with ingredients that most of us have on hand. I want to thank you, Colonel, for keeping the website going. Since learning of their passing, I've watched about 50 vids so far. I love your stories about life with your mom and Mr Bucky, and your sister who left us so soon. What a wonderful family you are part of. I make a cake like this, minus the pecans and the icing. Instead of the icing I put a dollop of whipped cream on each serving. And the recipe is simply called: Fruit Cocktail Cake. I like your version, it seems a bit fancier and I will definitely be giving it a try!!
