Tex-Mex Style Chicken, Rice, & Beans using a Crock Pot & Instant Pot

This meal is full of flavor and not too spicy because of the mild enchilada sauce.
CHICKEN INGREDIENTS:
4 Chicken Thighs
1 Onion (sliced)
1 Can Mild Enchilada Sauce
1 teaspoon Cumin
2 teaspoons Garlic Powder
Salt & Pepper to taste
1 Can Black Beans (drained)
2 Tablespoons Cornstarch
1 Tablespoon Water
In Crock Pot, Cook chicken on "high" until tender (approx. 3 hours).
Add 1 Can Black Beans (drained & rinsed) to crock pot 30 minutes before chicken is done.
Remove beans after 30 minutes and ½ liquid from crock pot.
Thicken remaining liquid with cornstarch slurry (2 T. Cornstarch, 1 T. Cool Water). Serve over chicken.
RICE INGREDIENTS:
1 Cup Rice
1/3 Cup Picante Sauce
1 Cup Water
½ to 1 teaspoon Cumin
1 Packet Sazon Seasoning (optional)
½ teaspoon Kosher Salt
In Instant Pot, Cook 4 minutes on high pressure, then natural release for 10 minutes.
(Top with cotija cheese, cilantro, green onions.)
