    Criss cross stacking probably allows the air to escape before getting to the bottom. I'm glad you got a good harvest this year. Have a good week.

    You offset stack your drying supers, grand! That creates additional airflow vortices. Good on you Darren! On of the simple tips most people miss.

    What i usally do is if I have one box that is high, I mix the frames in with some really dry boxes and it works out great. You have some great looking honey frames, Have a bless day.

    I think I saw Nathan at Duck River Honey or Mike Barry mention they had better drying with the boxes stacked as they were on the hive not rotated that way air is forced through all the boxes before it exits. It looks like your setup is working well for you though. I always mean to mention but it's not a huge deal your little yellow 5 gallon bucket holder for dumping is assembled backwards; the top part is made for the curve to match the bucket. Not a big deal either way but I thought I'd mention it. Thanks as always for sharing!

    Awesome 😄 I hope you had a great total 👍 wow that looks great in mid winter 😂 great video about checking moisture and not just assuming it's right👍 there's nothing worse than "bottle surprise" I've seen it happen with honey that was a gift from a local beekeeper to the guys that bring queen cells up here in Thier bread truck and he got the opinion that central Otago honey was just nasty because of it 😬 so it's really important to check that moisture 👍 great video 👍👋

    Hi Darren, great testing video as always. I wasn't sure on SHB eggs hatching so I Googled it and most say humidity above 34% (Relative Humidity) the eggs will hatch into larvae and from what I read the SHB larvae are the ones that burrow and eat honey, comb and even bee eggs and they release yeast into the honey as they burrow through it that causes it to slime. SHB adult females lay up to 30 eggs per cluster and can lay over 120 eggs per day.

    I always start to harvest my honey the same day it is removed from the hive, I only pull fully capped frames and only pull enough frames that can be processed in 2 days, I never really thought too much about the moisture content as I trust that the bees have it right if the frame is fully capped, I cant say I have ever come across fermented honey, apart from the mead I sometimes make. I think my bee club has refractometers that can be used by members, maybe I will check out the honey the next time I harvest.

    Hi Andrew. I've heard of people in Oklahoma having honey ferment in the comb when it was an extremely rainy season. The bees capped it before it was ready. I've never experienced it like that myself. I started the refractometer three years ago I believe. I was concerned I might sell some that would ferment. I was surprised I did have some frames over 19 occasionally, just like this time, but only the one. This year my honey was dryer than what I'm used to seeing, and it was thicker as well.

Most of my moisture content I had this year was around 16 percent but I had a bunch that was a little over 14 percent moisture. Ya when we are drying it out with a fan like I do also your open cells will dry out faster an better than the capped cells but yes that was odd that the capped was that high moisture content. Thanks

    Very nice Darren! I do test mine too, but I'm usually pretty low on the moisture content. (Around 15%). Have thought about getting a humidifier, but I just deal with Honey that's a little thicker.

    If you get 15% consistently, I wouldn't bother. I've had it in the 19's before and it definitely had to dry a few days.

    Darren, you defiantly have a good drying setup. It must be nice to have a full kitchen for a honey house. I saw on FB where your wife has been doing some heavy duty canning. I’m envious of your carrot crop! That’s one thing that does not grow very good in our soil. I hope you have plenty of 90 mil 5 gallon buckets ready.

    My capped honey was running higher than uncapped. I wonder if the honey can get more moisture after capping in high humidity areas (Houston, TX)

    Hey Nancy. It think the uncapped will dry faster once the flow stops and they stop bringing in nectar. If the weather is dry and hot anyway. I experienced the same thing. Sometimes that uncapped is so thick it will hardly come out. lol
