Through his talk, Dr. Amadeus Driando wants the world to know what they're missing out on, a reliable and delicious food source that is renewable, all-natural, packed with more proteins and nutrients than that of most meat, and most of all that is affordable for everyone. Dr. Amadeus Driando or Ando for short, is the co-founder of the Indonesian Tempe Movement, UK-based startup Better Nature, and an avid consumer of tempeh. Ever since he was little consuming tempeh was second nature to him, seeing it everywhere, and like all Indonesians, took it for granted.
Growing up in a family of food scientists made him appreciate all kinds of food made him realize the awesome potential of this overlooked food source. This was what drove him to take his studies in biotechnology and eventually on food technology, to see what benefits tempeh fermentation has that awaits unlocking. In his studies, Ando has invented 4 patents and written 5 texts on tempeh fermentation, including the forefront guide on tempeh fermentation, the Tempeh Bible.     Exactly. Tempeh is delicious and high of protein compare to tofu (which also soy-bean based).

    I think the idea here is that tempeh is a verb not a noun, so instead of focusing just on the soy-based tempeh, we should study and understand more about the process and mechanism using fungi as one of the sustainable food processing of the future 👌🏼 Anyway the first ever documented tempeh process is at Klaten Central Java, so indeed it's the Indonesia's best kept secret!

    In Scotland tempeh is more expensive than meat! So i make my own ❤️

    Raw Tempeh more probiotic which is good for health instead of pasturized and cooked..

    This is incorrect. Tempeh does not contain probiotics, but is instead pre-biotic and post-biotic. Also, you wouldn't want to eat raw tempeh due to food safety concerns, and so in either case, you would want to cook it, but I know some people are more adventurous! Either way, you would be hard pressed to find scientific data showing pro-biotics in Tempeh. So, if you need probiotics in your system, Tempeh wouldn't be how to get them, but IS a great way to take care of your gut regardless which is healthy indeed!

    @@philipdiceanu1421Seems counter-intuitive that there would be no live, if dormant, mycelium and/or spores In which case, it is a probiotic In addition to pre- and post-, as you say But, point taken however, for heat treatment to err on the side caution and safety

    The beans are cooked before culturing So maybe not raw exactly But I hear you The culture is still active Which is probiotic as far as I know And pre- still no doubt, & post- as has been pointed out

    I have no agenda to convert anyone to being vegan.. That's a different subject. TEMPEH is a wonderful food. I HIGHLY RECOMMEND!

    But of course proteins in tempe are different with the proteins in beef. We can get almost al essencial amino acid in every piece of beef but not in tempe. And don't forget the proteins in tempe are not as easy as proteins in beef to be absorbed.

    really good point. here is a way to remember how to combine proteins to make them complete: MGBS (Milk, Grain, Beans, Seeds) Milk+Grain = complete protein. Grain + Beans = complete protein. Beans + Seeds = complete protein. I believe this is why most Tempeh available in the store is a mixture of Beans and Rice. But if you are home-making bean tempeh just serve it with a grain. all the amino acids will be there if properly combined.
