    the directions don't usually say so, but, for better texture, you must let them sit longer after mixing. resting them before cooking will allow better rehydration and will result in less grainy eggs. just as important for "egg crystals".

    I am 76 learn in Army SIFT egg first Mix water SIFE one more time stop lump even small lumps mix sift one last time cook slow keep moving live a little wait will keeping cooking after off fair ! if you sift and stir will not be gritty I cooked for 300 man each morning

    I cook it differently: 2T egg powder, 3T water, 1t powder milk, 1T melted butter - mix and wait 5 minutes, add seasonings to taste and cook low and slow. Improves flavor, color and texture. Top with salsa, cheese or whatever you choose.

    I have a lot of powdered whole egg that I bought to make protein bread so I plan to try this by adding cream instead of water and adding salt and pepper,thank you to the one that gave that information.I am at trailer now and running out of real eggs,so this might solve the problem of running out of eggs

    I've read somewhere that with powdered eggs you are supposed to keep them on the stove longer and then they will turn the right color and texture. And if everything else fails - I'd imagine pancakes or omelets can work quite well and they are not much different in preparation from the scrambled eggs, especially with powdered milk.

    Mine are almost a 1 to 1 ratio of egg powder to water, just a tad more water, mix well then mix again, ZERO lumps, then when you cook they take longer than regular eggs, get the same texture with this method BUT the taste is def not like fresh cracked eggs of course, has an “off taste” from what you expect if you think it’ll be the same, but works good for combining with stronger flavored foods into a bfast bowl. 😉

    So what I’ve experienced with most powdered eggs. They are often watery. You’re correct that when you cook it. There’s water leaving the eggs. I just make sure that I cook them enough that the water leaves. I’ve also tried using less water. That tends to help. As for flavor. Most common types of powdered eggs are spray dried. Meaning they take the liquid eggs and spray them through a fine mist in super heated chamber. They almost instantly turn to powder as the moisture leaves the eggs. This high heat causes for an off flavor. It’s an affordable way to dehydrate eggs. It’s been around since at least WWII. I usually add salt and pepper and sometimes hot sauce to make them taste better. The only other thing I know is ova-easy powdered eggs. They’re a brand that has a propriety method of drying eggs. A lot of retailers claim they’re freeze dried but I haven’t come across anything that says they are freeze dried. They’re egg crystals. Which would make sense that they’re freeze dried. Bottom line is that these eggs are the closest to fresh eggs you can find on the market. They remove glucose from the yolk for stability. I did some research and found that eggs are unstable. The proteins and vitamins breakdown very easily. I can’t fully remember all the stuff I learned about eggs. During the shutdown I learned so much about eggs. It’s why you can’t see a 30 year shelf life like you can for other freeze dried foods. I think ova-easy claims up to 15 years. They’re just very proud of their product. Last I knew. A number 10 can is like $100. But it is the best egg on the market.

    Lots of whip to get rid of grit and aerate. A longer cook to dry em out. Salt, Pepper, Picante. If you're hungry and in a tight spot, you'd eat the ass end of a hobby horse.

    Yes I would. I have no idea of hunger hope I never have to find out. My father experienced hunger as a kid. He now tells us stories of what he had to eat and drink just to feel full.

    When I was a child i lived on a military base, they oftentimes served powdered eggs for breakfast sometimes oatmeal before class when i was in elementary school; believe me, that is exactly how it looked, you hooked it but sometimes it looked molded together. "Anyway nice work".

    I used this brand to make funnel cakes at our church bazaar and taste great. I think baking with powder eggs is the way to use them not cooking scrambled eggs.

    That has to be the best can opener in the world. Definitely the best one I have ever seen. 👍 These should be good for simple peanut butter cookies. The recipe with just eggs cup of peanut butter and half cup of sugar. All prep stuff for some quick simple cookies that I would rather bake and then crumble up and mix with butter to bake into a cheesecake crust and make a simple chocolate chip cream cheese cheesecake filling. Quick little treat instead of paying $14 for the assorted cheesecake with only 2 chocolate ones.     Now try OvaEasy egg crystals. They come out yellow, and very tasty. You can get them in 4.5 oz pack, and in cans.

    I use 52 grams of powdered eggs to 145 grams of water.Add plenty of salt ! Stiffer mixture than what was demonstrated.

    I have the same pan and the butane cook stove too. Love them! I'm wondering if maybe a tad less water would make a difference in the taste? Could be too much water will destort the taste. Although you said they were a bit grity. I'm in Canada and having a heck of a time finding powdered eggs. May have to buy from the US which is fine as long as I can get them.

    Juanita - there are several to choose from at amazon, though they aren't necessarily the lowest price, nor do they send the freshest products. I've stopped buying long term food products off amazon because of shelf life issues. I've received augason farms products with a production date stating they were already 2 &/or 3 yrs old when I got them, vs 6 mos. old on the Wal-Mart shelf for same or lower price. for price I would try Judee's on amazon. I bought the 3# bag for $30 in April (now $35) which isn't a bad per pound price. flavor is okay, reminds me of my army days. for best results let it sit for a few mins after mixing to fully reconstitute. eliminates the grainy texture. for better flavor add touch of mayo when mixing.

    @@donoimdono2702 Thanks for the heads up. I wish I could buy any of this at Walmart here but I live in a small fishing village in Nova Scotia. We're lucky to have a Walmart at all. LOL It took years after building it to add a grocery dept. I got spoiled after living in the US. I will definitely look at Judee's.

    I'm not sure what your eggs look like, but my eggs with shelled eggs look like that. Btw, powdered eggs ARE real eggs, just dehydrated and powdered. I also notice you used water and no salt and/or pepper. The best prepared eggs are made with milk or my favorite, whipping cream plus salt and pepper. I also add cheese during the cooking time. So yeah, I wouldn't have liked what you just made either.

    Any product that contains fat will have a shorter shelf life. I know the number 10 cans they say 5 years they last but I have kept them longer and they were fine. But store at your own risk.

    I just tried for the first time, cooking them and it stayed water until it all evaporated in the pan. They never even got any kind of form whatsoever. I ended up throwing it down the sink. What a waste of my money.
