Dad was on my mind today, so I made one of his favorite sandwiches. All you need is potatoes, oil, salt, bread & mayonnaise. It is major carb/fat overload but on a hot Florida day, when you are working for many hours, in the sweltering heat it somehow hits the spot. The ultimate comfort food.

I love fried potato sandwiches also definitely with the mayo but I like just a little bit onion on it
