This is a recipe for Tarte Tatin with plenty of apples.
Tarte tatin is a French pastry made by frying apples in sugar and baking them with a pie crust.
This time, I baked it with a pie crust on top, which can be made quickly without using frozen pie sheets.
I have written how to make it and tips in the subtitles, so I hope you enjoy the video with the subtitles turned on♪
▷Ingredients (φ15cm):
600g apples (about 4 medium sized apples)
90g granulated sugar (apple weight x 15%)
10g unsalted butter
60g cake flour
10 g sugar
Pinch of salt
30 g unsalted butter
30 g cold water
1. Remove the skin and seeds from the apples and cut them into 8 equal pieces.
2. Place granulated sugar and water in a frying pan over medium heat. Sear the sugar until caramelized.
3. Add butter and melt, then add apples and cook for 30 min, stirring occasionally.
4. Place the apples in a mold and bake in a preheated oven at 180℃ for 40-45 min.
5. While the apples are cooking, make the pie crust. Mix cake flour, sugar, and salt.
6. Chop the butter into small pieces while dusting the flour.
7. Add cold water and bring the dough together. Wrap in plastic wrap and refrigerate for 1 hour.
Refrigerate for 1 hour.
8.Bake in a preheated oven at 180℃ for 30-35 min.
Remove from heat and refrigerate for 5 hours.
