Tarator (Bulgarian Cucumber Soup) | Garden Food From Scratch

Today I'm sharing a recipe you didn't know you needed! Got a glut of cucumbers and growing sick of making pickles? Make this refreshing Bulgarian soup, Tarator!
A few medium cucumbers, chopped.
A few cloves of pressed or diced garlic
1/2 C chopped walnuts
A handful of fresh dill, chopped.
1 C yogurt
1-2 C water.
Combine all the ingredients with the yogurt, stir in water slowly. Refrigerate for at least an hour before eating for best flavor.

    I am Bulgarian. One tip for you is to put a few ice cubes in the tarator for cooling it quickly.

    I worked as a waitress for years and one of our most popular soups in the summer was this; Gazpacho Ingredients * 1 English cucumber or similar * 2½ pounds ripe tomatoes, chopped * 2 fresno chiles, or ½ red bell pepper, stemmed and seeded * ¼ small red onion, rinsed * 2 garlic cloves * ¼ cup chopped cilantro, plus more for garnish * 3 tablespoons sherry vinegar or red wine vinegar * ½ cup extra virgin olive oil, plus more for drizzling * 1¼ teaspoon sea salt * ¼ teaspoon freshly ground black pepper * Cherry tomatoes and fresh herbs, for garnish Instructions * Finely chop ¼ of the cucumber and reserve for garnish. * Peel the remaining cucumber, cut into chunks, and transfer to a blender. Add the tomatoes, peppers, onion, garlic, cilantro, vinegar, olive oil, salt, and pepper. Blend until smooth. Season to taste and chill for at least 2 hours.
 * Serve the soup with the reserved diced cucumber, fresh herbs, drizzles of olive oil, and freshly ground black pepper. Enjoy 🤍

    The other lovely Bulgarian Summer salad was Shopska Salata (Shop Salad)... tomatoes, cucumbers, a feta-style cheese called serene,, oil and vinegar and a seasoning called chubritsa (summer savory), and salt and pepper to taste. I think if you added white onions then it was called Ovcharka Salata (Shepherd's Salad). I knew the salad/appetizer version of Tarator as Snezhanka which I was told was Snow White Salad. Oh thank you for evoking such lovely memories of my time there over 20 years ago.

    My mama makes this every summer with her fresh garden harvest. She adds some sort of onion. Sometimes, its green scallions, sometimes chives, or purple onion or shallots, whatever comes out of the garden fresh that day. She also keeps it a more saucy/thicker consistency. Very refreshing and delicious indeed. Yum 😋

    Tarator sounds yummy! It's possibly a close relative of the May Salad my (Russian-Polish) grandmother would make, and which I try to make every summer: chopped cucumber, scallions, and radishes, mixed in with cottage cheese and sour cream, and then some ground black pepper. Also very variable according to taste, also very light and refreshing in hot weather.

    In Portugal we do something similar, instead of yogurt, we use vinegar. Instead of dill, we used finally chopped onion, and instead of nuts, we used finely chopped cooked potatoes. Oh, and my mom doesn't add pepper. So it's finely chopped cucumbers, finely chopped onion, finely chopped boiled potatoes, then add olive oil, vinegar and cold water. My cukes are just starting to come in. Tomorrow I can't wait to try this version. Note to self sow more dill.😊

    I'm armenian.. we eat this always.. nana always used kirby cukes because crispy and small seeds.. so very refreshing in the summer but we eat it when we can get the cucumbers..we tend to use Greek yogurt but add ice cubes to it as it sits in fridge for a little while I crisp the cukes even more.. never had it with the walnuts..sounds great.. we fish out the ice before serving... we call it Jajuk..

    My favorite make to eat right away cucumber salad is peeled and sliced cucumbers (2-3 large) 1/4 cup of homemade ranch dressing and 1/2 cup sunflower kernels and a few minced green onions. My favorite marinated one is peeled and sliced cucumbers, pickled red onion (lots!), black olives, enough Greek dressing to make everything moist but not sopping, let it sit half a day, serve topped with feta.

    Oh, man, this is delish! I've never heard of Tarator before and I mixed some up just now. I didn't have dill weed because my Black Swallowtail caterpillars ate it all and I substituted mixed nuts for walnuts because that's what I had. I can't wait for it to chill in the fridge and really "marry" all those flavors. But it's good just after making it.     I make a soup that sounds weird but I love it. It has cucumbers, romane lettuce, onions, garlic, salt and pepper. Simmer till everything is wilted well then purée. Serve with sour cream or yogurt and crackers. Yum

    I love making that. It’s so refreshing I make it puréed tg\hough and did7know about adding walnuts. Now I think I’ll mix it up a bit. Make it puréed. Add extra cucumber chunks. And walnuts. I’ve just started harvesting cucumbers. Also in the past I’ve frozen extra cucumbers and made it with the frozen ones later

    @The_Farmers_Table we have been grilling boneless leg of lamb (Costco because we don't have the land to raise it). Salt, pepper, and powdered roasted garlic grilled to 145* perfection! Tastes better than ribeye!

    That looks soo good! Saw that on Will's video a few days ago, but not the recipe. I'll have to try it when my cukes come in! I like to make gazpacho with my summer veggies - also a delicious cold soup - tomatoes, peppers, cucumbers, garlic and I think onion. I usually tweak it to include whatever I have available , and blend some of it up so it's part smooth and part crunchy. Refreshing!

    Never been a fan of tzaziki, but we make a cucumber yogurt dressing for pitas which is basically this plus lemon juice and parmesan cheese, and sans nuts and water. Delicious! Since you asked for recipes, I managed to perfect my harissa recipe this year, when last year's cilantro reseeded and took over my spring garden. It's somewhere between traditional harissa and green harissa. I just combine all the below ingredients in a food processor and then freeze in ice cube trays. My favorite breakfast is an egg burro with kale, onions, fried potatoes and a cube of harissa. 2 cups chopped cilantro 1 tsp ground cumin 1 tsp ground coriander 1/2 tsp ground cardamom Juice of 1/2 a lemon 1/4 cup olive oil 1 or 2 rehydrated ancho peppers, skins removed if necessary 1/2 a jalapeno (or serrano if you prefer spicier food) 4 garlic cloves Salt (to taste)

    @The_Farmers_Table you should definitely try making tarator with bulgarian yogurt (it's quite different from other yogurts) Fun fact - we love to argue about the way we like our tarator - whether the cucumbers should be chopped (if yes - how coarse) or grated, with or without garlic, walnuts, vinegar, with olive oil or with sunflower seeds oil (which is more common in our cuisine), in a bowl or in a glass 😄😄😄 The other bulgarian food you should try is liutenitsa (or some of our neighbours condiments like ajvar, pindjur, zacusca, kyopolou, malidzano) I'm sure you would LOVE all of them! Until 30 years ago most of bulgarian families who lived in the cities had grandparents in the villages or at least a small garden somewhere near the town and every family preserved their own produce for the winter so we all had our own recipes for liutenitsa, liutivka, pickles and others

    Very nice . My son Toby, is always asking me to make a new soup. We love dill. I put dill in my potato leek soup ( a Swedish thing) and I use ham broth in it as well. Cold beet soup with sour cream is yummy for summer too. Now I have a new soup thank you👍

    Jess this is so similar of our Hungarian cucumber salad. Diff is no nuts and insread of yoghurt we put sourcream and add paprika powder. We eat it as a side dish with crumbed meat and fried potato. I must try yours love wallnuts. I only wish I can have yellow cucumber here. Thank you for sharing this yummy recipe.

    Jess that looks so refreshing. I love cucumber 🥒. I wonder if a squeeze of lemon 🍋 juice would be good. I use a lot of lemon and lime juice in Hispanic recipes. And I can eat sliced cucumbers and lemon sprinkled with Tajin a chili citrus 🍋‍🟩 seasoning. Also good on watermelon

    That sounds really tasty! I will definitely try this. Growing up we had cucumbers in a sauce made with sliced onions, white vinegar, mayonnaise, salt and pepper. It seems a little thick at first but after sitting in the fridge for an hour or so the cucumber juice thins it out.

    Nice! Another way to use cucumbers! Have you tried cucumbers and tomatoes with just a spoonful of mayonnaise? Salt and pepper to taste.

    Thank you, Jess. Suggestion: add some chia seeds for more fiber and omega-3. Chia seeds have about 7 grams of fiber per tablespoon, are tasteless, and normalize gut motility. They are good for dogs, too: 1/4th teaspoon for every 10 pounds. See also Indian raita, which is also a sauce/soup with yogurt cucumber, onion, cumin and cilantro. It's a cooling sauce that goes well with spicy dishes. This recipe works with non-dairy yogurt also.

    I love the recipe you put up. I will have to get that one to try. It looks simple easy, and everything you put in. I like already. I have some fresh dill growing in my garden right now so that makes it good for me. I will really have to give this one a try. I have made a cold soup. Think it was a Russian soup and it use radishes, I would have to go back and see how I made it. I have a video up on my channel but it was at least two or three years ago or maybe longer gonna have to go look for it but I remember I liked it really well, but my granddaughter didn’t and it had cucumbers in it also might’ve been a pretty basic what you did except we added radishes and I think there was one or two other things we added maybe it was green onions but I remember I liked it. Thanks so much for sharing.

    May I recommend growing sorrel and making Ukrainian Green Borshch. Such an incredible summer soup. I also love Ukrainian pickle soup and Ukrainian sauerkraut soup (Kapusniak). They're a very soup centric people 😅

    Thank you Jess for sharing, I will try this, making fresh goat milk yogurt and I have cucumber just staring in garden and the dill is growing nicely. I also have garlic in the garden too.     Ohh, I'll be trying this! It's my first year growing cucumbers and I just noticed the first tiny fruit on my plants (I'm in the UK so our cuke season is also short but for different reasons lol)! One of my biggest bind-blown moments was trying gaspacho with garden tomatoes last year - absolutely heavenly.

    Another Slavic variation of this dish is called okroshka, popular in eastern Slavic countries like Russia, Ukraine, Belarus. Okroshka takes the same idea and adds radish and boiled egg, maybe some boiled potato, possibly some ham or left over meat from dinner, so it’s a heartier version. Chop everything very small, add yoghurt and sparkling mineral water (you can do it with regular water, too, but the sparkling version is so fun and refreshing). Same as with the Bulgarian version - lots of dill, salt and pepper to taste, garlic optional but recommended.

    Sweet Jess, The soup looks refreshing. In the hot summer we prefer quick, easy, and cool meals. I'll take asian rice sheets and make vegetable rolls with bib lettuce (you can use romaine lettuce), a little sliced purple cabbage, carrot chopped in match sticks, cucumber thinly sliced length wise, 2 small leaves fresh basil, 1 leaf of mint, roll the rice sheet to make a veggie (small burrito) follow the instructions on how to use the rice sheet. The dipping sauce is a sweet and sour sauce, or a crispy sauce (like the one you make). The rolls are refreshing, and filling. We eat these often.

    Same! It is my go-to summer garden veggie dish. It's a great use for herbs and you can put basically any veg in there. I love it with a peanut lime dipping sauce.

    @@leakindt653 Have you tried making a fruit roll. So good with sliced strawberries, watermelon, a little mint, and a little honey to dip it in. I enjoy making the rolls when it's so hit outside. No cooking for me in the heat.
