Recipe in English:
Ingredients:
Prepare Tanzhong Milk Bread:
-Water ¼ Cup
-Doodh (Milk) ¼ Cup
-Maida (All-purpose flour) ¼ Cup
-Doodh (Milk) warm 1/3 Cup (80ml)
-Bareek cheeni (Caster sugar) 1 tbs
-Khameer (Instant yeast) 2 tsp
-Maida (All-purpose flour) sifted 300g
-Milk powder ¼ Cup (25g)
-Himalayan pink salt 1 pinch
-Anda (Egg) 1
-Makhan (Butter) 30g
-Cooking oil 1 tsp
Prepare Garlic Cheese Filling:
-Cheese grated ¾ Cup
-Hara pyaz (Spring onion) chopped ¼ Cup
-Lehsan (Garlic) chopped ½ tbs
-Italian seasoning 1 tsp
-Himalayan pink salt ¼ tsp
-Kali mirch powder (Black pepper powder) ¼ tsp
-Peanut butter as required
-Chocolate spread as required
-Anday ki zardi (Egg yolk) 1
-Doodh (Milk) 2 tbs
-Makhan (Butter) soft
Directions:
Prepare Tanzhong Milk Bread:
-In a frying pan,add water,milk,all-purpose flour & mix well,turn on the flame & cook on very low flame until it thickens & dough is formed (stir continuously).
-Transfer the mixture to a bowl,cover its surface with a cling film & let it cool completely.
-In a dough kneading machine,add milk,caster sugar,instant yeast,whisk well & let it proof for 5 minutes.
-Add all-purpose flour,milk powder,pink salt,egg,prepared flour paste & knead at normal speed for 5-6 minutes.
-Add butter & knead until smooth dough is formed (normal speed for 8-10 minutes).
-Grease dough with cooking oil,cover & let it proof for 1 hour (warm place).
Prepare Garlic Cheese Filling:
-In a bowl,add cheese,spring onion,garlic,Italian seasoning,pink salt,black pepper powder,mix well & set aside.
-Transfer the dough to a clean working surface & knead dough for 2-3 minutes.
-Take a small dough (100g),make a ball,sprinkle dry flour & roll out into oval shape.
-Mark the dough from the center & cut into thin strips with the help of the cutter (one half of the dough).
-Spread prepared garlic cheese filling or peanut butter or chocolate spread on the remaining half of the dough then roll out the dough & seal the sides carefully.
-Place the bun on the greased bun tray,cover with cling film & let them proof for 30 minutes.
-In a bowl,add egg yolk,milk,whisk well & apply on the buns with brush.
-Bake in preheated oven at 160C for 30 minutes (on both grills).
-After baking,brush butter on top & cover with kitchen cloth for 10 minutes & serve (makes 6).

Quick note: Tangzhong is normally used in high hydration doughs (normally 85% or even more). This results in a very sticky dough and tangzhong allows the flour to hold even more water and still makes it manageble to knead by mixer. Your recipe seems to be around 75% hydration in which case tangzhong won't be beneficial. Also, to get the best possible texture and rise, bread flour (instead of all purpose flour) is highly recommended due to it's higher gluten content. In your video the crumb seems to be cakey suggesting a dense and mabye not very stretchy bread. High hydration bread with tangzhong would be much more stretchy and won't cut like a cake does. Try making a separate dough with that and you will see a huge difference. Maybe make another video too!

@@sanayousuf8757They won't reply as they didn't research this technique properly before making this video. I'd be surprised if they did! Still, massive respect to FoodFusion for their success. Bread making isin't easy and it isin't FoodFusion's strength either.

You can bake in a closed pot too but tangzhong is an advanced baking method / technique so you can try baking simpler breads first and experiment. An oven is highly recommended to bake breads.

Home made bread that uses any kind of instant yeast and baked without a pre-ferment will usually smell yeasty. You can add some other things to improve the flavor and aromas like raisins or other seeds. Or look for "poolish" based recipes on KZread. It helps improve bread flavor.
