2 1/2lbs Country Ribs
1t kosher salt
1/4t black pepper
6-8 garlic cloves
1/4c Shaoxing Wine
1c water
1lb rhubarb
1T canola oil
1/2t chopped ginger
1/2t chopped garlic
1/4c sugar
1T soy sauce
1/4t Szechuan peppercorns
3 whole cloves
1 star anise
1/8t fennel seed
1” cinnamon stick
1c water
1t beet powder (optional)
