Idly /Dosa batter
Idly rice 8 cups
Urad dal 2 cups
Fenugreek 1 tbsp
1. I have taken Lakshmi brand Idly rice (8 cups ) and Lakshmi brand Urad dal (2 cups )
2. Incase I didn’t find Lakshmi brand i have tried using Swad Urad dal .. this also gives similar results
3. I prefer soaking Urad dal in colander bowl ,it is easier for me to transfer Urad dal to grinder without more water
4.I have washed Rice , Urad dal and fenugreek separately like 4 times and then soaked separately in drinking water ( I use filtered water from refrigerator)
5. I usually soak them overnight
6. I always grind the Urad dal first
7. I normally use only the Urad dal soaked water for the entire grinding process and discard the rice water to plants and drink the fenugreek water myself. ( no specific reason but I do this)
8. I also prefer immersing few ice cubes in Urad dal water , this water when added for grinding makes the motor to not get heated up.
9. Add Urad dal now to the grinder and slowly add water , splatter the water here and there .. try not to pour water instead splatter it using hands or any laddle
10. Use the spatula to loosen the Urad dal sticking to the bottom of the grinder and sides
11. Repeat this same process for every 5 mins for about 45 mins ( splatter some water use a spatula )
12. I have never faced any issues of adding ice cubes into the drum.
13. After 45 mins the batter looks like the one shown in the video .. I would have dropped a small amount in water and shown
14. In this consistency you can remove the batter from drum.
15. Transfer it to a separate container.
16. Now add soaked fenugreek followed by soaked rice. I grind rice in two batches
17. Now you can pour water to the drum then and there and wait till rice comes to a white rava like consistency
18. Then you can transfer it to the same container where we have Urad dal batter
19. Now repeat the process with remaining soaked rice . Before removing that add required amount of salt to the drum itself
20. I have shown how I add salt in the video. Like 2 handfulls and some extra salt
21. Now mix the batter using hands .. literally I do it for about 5 mins. This helps then batter to ferment well.
22. You can see the air bubbles over the batter after mixing the batter well.
23. Now set aside for 8hrs .. sometimes depending on the weather it could ferment early too..
24. I usually leave it on the counter above the dishwasher itself. The warmth over the counter is itself enough. But you can also place it inside the oven ( preferably without preheating) I somehow don’t like the taste of idlies when kept in oven. So I am not an expert about that process. I have never tried mostly.
25. After 8 hrs the batter ferments well and mix it using a laddle . Mix the batter well and start making idlies
26. Generally the first day idlies are perfect when made , the next day I make dosas
To make idlies
1. In an idly pot I add water and 2 small lemon pieces
2. This makes the idly pot to descale by itself. I have never experienced any taste of lemon in idlies by doing this
3. Once the water starts to boil , I pour the batter to idly moulds. I use cloth over the plates for steaming
4. Now place the idly plates into the pot and cook in medium flame for 5 mins and then reduce it in between low and medium for 5 mins
5. After 10 mins or sometimes even before that idlies would have cooked perfect
6. Serve hot with your desired side dish

I am using Dura + Ultra 1.25 ltrs
I purchased this 7 years ago in Amazon USA. So currently I don’t have the link. It has been working well so far.

    Hi Menaka. I wanted to give a feedback. Your batter recipe is awesome. I used to grind fenugreek with urad for almost 15 years now. Last la batter la idli pota kallu madhiri irundhu previously. Now for last 2 times since i saw this video, started grinding fenugreek separately and then rice just like you did. I also started using ice water even when i grind in grinder after seeing your video. Last day la idli potalum, romba soft ah iruku first day la pota madhiri. Mikka nandri for this video.     Same method only sis ..for 2 glass rice 1 glass Urad dal.. 3 glass rice 1.5 glass Urad dal .. I always soak overnight sis

    Which state do you live in? Do you make any changes in fermentation method during winter and summer. Recently, my idlis have been puffing up nicely but as soon as I open the lid when the time is up, they go flat and turn very sticky. What could be the reason for that? I use a regular pot with glass lid for steaming. So I see this happening through the glass lid and it’s very disappointing when they go flat as soon as I open the lid 😭 PS: Thank you for the detailed and very clear video!

    We live in Texas sis. I follow the same procedure in winter also sis. It takes some extra time to ferment in winter. I leave it in countertop itself. Sorry sis I couldn’t find the reason.. if you think it would be the pot ,next time try in some other pot and check sis…

    I use lodge brand dosa pan da(10.5 inch) stainless steel cookware that I use is Cuisinart brand da.. both I bought here , I have no idea of these cookware in India da..

    Thank you dr sis❤️ You can also add that way sis🙌🏻 but I always grind it before adding rice.. may be i got used to this method.. nothing wrong in soaking together with Urad dal or rice.. but when fenugreek is added separately, it gets ground to a paste like texture which gives a nice flavor to the batter

    Any Urad dal sis, it doesn’t makes difference at all sis. I bought one from Walmart and the bigger one from dollar tree.. stainless steel mixing bowls from Amazon sis..

    No sis , I added Urad dal first and later only water .. could not say the quantity of water , since it depends on Urad dal.. and also I have added more ice cubes in it.. so it could be around 1 cup ( bigger one) .. that too i am not sure sis..

    If batter is in fridge take it out and leave it for atleast 1 hr da.. then the same way you can make.. suppose you are taking it only when you make idlies , then you need extra 2 or 4 mins for the idlies to get ready.. use a toothpick and check after 10 mins da ..
