Chef Joe, thank you for teaching us how to make a good Yang Chow Fried Rice. Regarding some of your fans criticizing you not wearing a glove, I want to let them know that no restaurant chef will wear a glove to work inside the kitchen because this is not practical. In the old days, everyone of Hong Kong Chinese restaurants, including cafe restaurants, have a special way of cleaning rice. Everyday they need to cook 40-50 lbs of rice. They pour the rice in a big vine bucket, and they take off their shoes and socks and go inside the vine bucket. With their bare feet on top of the rice, they use a water hose shooting out water and keep stepping on the rice vigorously. This is the most efficient way of cleaning rice. The same way western people making their wine by stepping on the grapes bare feet. We are being misled what is clean and what is not clean. When your hands are clean, they are clean. All the plastic gloves coming out from the factory may not be cleaned, as the manufacturing process may be contaminated.

祖哥講得啱帶膠手套未必干淨,你知唔知帶膠手套反而唔干淨,因為帶咗手套感覺唔到手邋遢所以唔係經常洗手,如果冇帶手套隻手經常覺得癡粒粒,所以你會經常洗手反而干淨,帶手套表面係給你們看的,而且帶膠手套做爐唔實際,好容易搶火燒到手做成工業意外,呢啲係我哋做了幾十年飲食經驗。

呢個適合新手,如果想更加好食更加高級的要加入高湯,開大個火向側邊落,一次不要太多,要分兩三次落,將炒干佐的飯又重新注入高湯,從而令到每粒米更加飽滿,味道更加升華而且最重要的係唔會干唔會硬。

無落些高湯是敗筆因炒到飯變沙仔而义燒粒硬曬呀!蔥亦炒得太耐一點!用些少雞油更香用牛油不是傳統作法只適合番鬼口味!建議不是批評虛心改進是無價做得網主應隨時吸納多些意見呀!

生熟鐵鑊先要熱鑊凍油,目的係打開鐵裏邊嘅小孔,等後落嘅油將小孔填満,咁就唔黐底。易潔鑊避免左癡底嘅問題,所以凍鑊凍油先啱。
